Besides having a "leftover night", why not use leftovers when preparing lunch for the following day. A lot of meals (both hot or cold) can be packed for "lunch to go" or most definitely for eating at home. I try to avoid any type of waste, so I make sure to use my leftovers within a day or so, or I freeze them for future meals. Many times, I actually make extra so that I will have leftovers--for additional meals during the week or for freezing. Being able to pull a homecooked meal from the freezer instead of needing to rely on "pre-packaged or fast" food is both convenient and economical.
We usually cook enough intentionally for leftovers - whether it be for the next evening or lunch the next day. You can be very creative in making a dish that wasn't the same, yet uses the leftovers - and it always tastes wonderful. And the cost savings tops the cake!!
