After having home made soup the canned stuff just doesn't cut it. Tastes watery not much flavor and missing all sorts of ingredients.For years I have saved backs, wings and some of the legs in bags for soup. When I make the soup I toss the frozen stuff into my pressure cooker and start the broth that way. I will add other chicken to the soup later. Ham and bean same thing the bone goes into the freezer and I know a wonderful soup awaits. I have some beef in the freezer now waiting to be made into a nice hearty thick Beef Barley. That with a loaf of homemade bread and you have a meal that will keep you filled and warm all day.Soup is such a heart warming, satisfying meal you just can't go wrong.I used to take the kids to the store and turn them loose in the produce section and tell them to find a vegetable that they have never seen before and we would try it in soup. We found out that my stepson loved "albino carrots", known to the rest of the world as parsnips, in soup. It was always fun to take a trip to the store with a soup in mind.
One of my favorite soups is Michael Chiarello's Roasted Butternut Squash Soup. The other favorite is Ina Garten's Mexican Chicken Soup. Both recipies can be found on the Food Channel's website. Delicious!!
