A GREAT Soup

I got this from a friend for Christmas.  She layered all the dry ingredients in a big jar.  It made the best soup so I thought I would share.
Lentil and Brown Rice Soup
5 Cups low fat chicken broth
3 Cups Water
1 1/2 Cups lentils
1 Cup brown rice
1 35 ounce can tomatoes, drain, reserve juice and chop tomatoes
3 Carrots. (when I added the carrots I used a 1 pound bag..I love carrots)
1 large onion chopped
1 stalk celery, chopped
1/2 tsp dry basil
1/2 tsp dry thyme
1 bay leaf
1/2 Cup minced parsley
2 Tb cider vinegar
In a large pot combine all ingredients except parsley and vinegar.
Bring to a boil then reduce to a simmer.  Simmer for 45 to 55 minutes.
Stir in parsley and cider vinegar, remove bay leaf and serve.

When my friend layered this in a jar she also added dried red kidney beans, dry garbanzo beans and dry navy beans, probably about 1/2 cup of each.  The liquid was increased a bit as well.  But the recipe is pretty forgiving and can be adjusted for any type of beans.

I enjoy lentils more than most my friends, as they don't know what lentils are, and this sounds pretty good. Never tried them with tomatoes but the rest is pretty standard. I'd say it's worth a try. Thanks Nikki.

Thanks Nikki!!!  This looks great and good for my diet. I have everything on hand
so this will be great this week.  It was kind of cool today and will be cool Thurs. so
I will soak the lentils and beans tonight.  Thanks again and stay warm!!!!!

hINIKKI;   thanx for a terific recipe;As you may alreadyknow/remember; we go"meatless"twice a week.I have many  meatless recipes but am always delighted to get a new one.This one looks terrific& I alreadyy have most of the  ingredients in my well stocked pantry.It loooks economical  of time & effot l& will be aBIG help when our 6 Grand kids( + parents)come to visit.I usually make fried orBBQ chicken, bread stuffing and a BIG platterre of steamed baby veggies: sugar snap peas, baby carrotsbaby ,patty pan squash, broccoli florets new redskin tiny  potatoes; a colorful  assort ment to allow them to try new[to them] foods( veggies)  .Dessert is a fruit platter & cookies; pudding cups or a chocolate bunt cake.
I thikI'll pkgitup ina BIG jar for a gift to a newlywed couple  or a new home  owner in our complex of 90 units( 30 in each building0

Thanks Nikki, this sounds real good.I made a bunch of quart jars up for Christmas gifts also.They call them gifts in a jar,I made labels and instructions for each soup base I made up.The only things needed were water,tomatoes,meat or any fresh vegetables desired.I added soup base to mine so no broth was needed.I thought this was such a good idea I made up several pouches of this soup base so when I'm tired or just don't feel like cooking there they are ready to go.I labeled the pouches so I know what they are and also the date they were filled.I do this for cookies also.I figure if you have the ingredients out just do all the measuring and it saves time and work later.

I am going to try this in the crock pot. I hope that after I bring all to a boil, I can dump in the crockpot & let it cook for several hours. I "might" pre cook the carrots a little longer since they take long to soften up enough for hubby.
 I really like soup & try to freeze a little out of each batch for days when I do not feel like eating what I cooked for my other 1/2 or he is having plan overs.

Carol, I did not have to soak the beans overnight.  When I got the jar with the dry beans and spices instructions were to pretty much dump everything in the pot and bring to a boil and then simmer for 45 to 55 minutes.  I think I let it go a bit longer I think the garbanzo beans were the only ones that could have used a little longer, possibly a "rapid soak".

One of the things I like about Thanksgiving, Christmas or Easter..the hams go on sale.  I always pick up one for the freezer.  I get it home and cut it up just to make soup with.  When I want to make soup I toss the frozen chunk into my pressure cooker let it "perk" away for 15 or 20 minutes.  This flavors the water and thaws out the meat.  Toss everything else in the pot and then I start cutting up the ham.  The only thing I do that takes longer than the soup is I have to make home made rye bread to go with my split pea or bean soup.

Thanks Nikki!!! It was lucky that I reread the recipe before soaking the beans. I
realized that when it said to bring to a boil and then simmer for 45 to 55 min. Thanks
for the tip on the garbanzo beans. It's 2:15p.m. here in CA so I have time to do a
rapid soak. Sorry I did't read it right the first time!!

Nikki, The soup was awesome!! I put a 1lb. bag of baby carrots in it and
the beans turned out really tender. Hubby ate 2 bowls and said to get more
of your recipes if I could!!!  Thanks again for a great recipe.
