My mint plant has taken over a corner of my garden, so I went searching for recipes to use it up faster. Here's a soothing drink that I am really enjoying. I drink it hot, but it may be just as good poured over ice. Hot Mint and Lemon Drink = rind from 1 lemon = 1/4 c. mint leaves (I used a little less, and it's okay if some of the stem is included) = 4 c. boiling water Remove rind with peeler, making sure not to get that white pithy part. Save lemon to use in something else. Place rind, leaves, and boiling water in container; cover and steep 5 minutes. Strain, discarding rind and mint; enjoy.
