I have done a spicy green bean stir fry with tofu. I will get the firm tofu, cut it in half and save half for another meal. The half I am going to use I will cut that in 1/3's place it on a kitchen towel and weight it down to remove more moisture. Then after several hours or overnight I cut it into cubes or strips, depends on how I feel. Place a bit of oil in a fry pan and brown the tofu, add frozen green beans and a bit of water to steam them. Then I will add some hot and spicy oriental sauce, a bit of siracha and hoisin combined or other sauce I found at Trader Joe's Sort of depends on what strikes my fancy. Even a mixture of red pepper flakes, water, soy sauce and peanut butter makes a good sauce.
