I think I'm getting addicted to chocolate cookies ---- lol
Tonight I'm going to stir up a batch of cvhocolate dough adding just the caramel chips. 
That will be great for the nutty people who don't want pecans in their cookies.

I need to bake cookies.  Chocolate sounds really good.  I think I have 4 left in the freezer.  Every time i bake cookies I immediately put some in the freezer.  Now I'm baking stuff with pears.  I've decided I have a fortune in pears on my tree with organic pears selling for $1.69 a pound.  Some of my pears weigh a pound and are over 12 inches around.

Judy - almost (ALMOST!!- lol) all of my cookies go into the freezer. 
The bags are carefully dated so I can rotate each batch.
I have that great upright freezer in the garage -- there's no room for it in this condo except the basement and I sure don't want to go up and down the stairs more than I have to. 
I do want a bigger upright but there's no way I can afford one.

Look at the Outlet store for Sears if you have one near you.  Another place you could try would be a Habitat Restore, they sell used items but sometimes there are  contractors that donate overstock.
Also if you have a HOBO near you, that is Home Owner's and Builder's Outlet great deals on lots of items.

I'm eating chocolate cookies and tea as I type.  I need to bake more as I got the last 2 from the freezer.  I think they were the VBB chocolate,chocolate chunk ones.

Yesterday I made a batch of regular cookie dough and stirred in lots of mint chips.  After baking and cooling I dipped about half of each cookie in melted chocolate chips and set them to solidify on sheets of waxed paper.  (Melting the chips in a large, glass measuring cup made dipping easy) 

~ blush blush ~ I was going to sprinkle each cookie with crushed candy canes while the chocolate was still soft enough to hold it but I forgot until it was all hardened.

Here's a chocolate cookie recipe I found on Fisher Nuts' site.  I can't wait to try it.............


TRIPLE CHOCOLATE COOKIES

  • 5 ounces unsweetened chocolate, chopped
  • 6 ounces semisweet chocolate, coarsely chopped
  • ¼ lb. unsalted butter
  • 4 large eggs
  • 1½ cups granulated sugar
  • ½ teaspoon vanilla extract
  • ⅔ cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 ounces milk chocolate, coarsely chopped
  • ¾ cup Fisher® Chef’s Naturals Chopped Walnuts
  1. Place the unsweetened chocolate and 4 ounces semisweet chocolate and butter in a microwave safe bowl. Microwave on medium for 30 seconds. Let sit for 30 seconds, stir the chocolate and repeat until chocolate is mostly melted. Set aside.
  2. In a mixer, whip eggs and sugar on medium-high speed about 5 minute until thick and light. Reduce speed and add in melted chocolate and vanilla until well blended.
  3. In a small bowl, stir together flour, baking powder and salt. Fold into chocolate mixture. Fold in remaining semisweet chocolate, milk chocolate and walnuts. Refrigerate until dough is firm, about 2 hours or overnight.
  4. Preheat oven to 350°F. Using a small ice cream scoop or a tablespoon, place cookie dough onto ungreased cookie sheet. Bake until the cookies have cracked and look dry but are still moist on the inside, about 15 minutes. Allow to cool before transferring to a rack to cool completely.

Nancy, it is the Fisher Nut warehouse that is not far from me.  I try to get down there at least once a month.  More often would be dangerous. Tuesday is Senior day and I take advantage of 10% off.  I often find things that I do not see in regular stores. It is even better when they have a warehouse sale. (They closed the store in Barrington and when they did they marked everything 50% off I got plenty to last for a while.)

Nancy, that looks like a good recipe.  Might have to double it as with only 2/3 cup flour it probably won't make many.  I have a little scoop I use for my cookies and it works great.  They end up mostly the same size.
