We have pumpkin,I bake it in a 9 by 13 cake pan.I piece together 2 pie crusts and then follow the recipe on Libbeys pumpkin.I omit the cloves only because I don't like them and add a little more cinnamon and ginger.Top with real whipped cream and enjoy!

I make sweet potato pie and pumpkin pie. My son asked me to do the same the same this year even though it may just be us. One year I forgot to put the sugar in the pumpkin pie, no amount of whipped cream helped it. Another year forgot vanilla but they were still good, lol..........

Typically I don't make any true pies.  We make Pumpkin Pie Squares every year.  Last year I also made a chocolate pecan pie.  Not sure about this year yet.  I've baked two pies this month to improve my crust making technique.  The first was Libby's Pumpkin Pie with the recipe off the can.  The second was the Brown Sugar Pecan Pie in the November issue of Good Housekeeping.  Both pies were yummy.  Making a crust from scratch is stressful, so I might not bother baking a pie for Thanksgiving.

I usually have at least a pumpkin pie.  But since my Mom always makes a ton of cookies to bring over the pie usually doesn't get eaten.  Maybe I'll just skip it this year so I don't end up eating it all afterwards LOL.  Holidays can be stressful if you're watching your weight!

Since we are both(many friends & family members, too) are resricted diets( fats carbs)I make a crustless pumkin ie n a Qt casserole. It's the filling we all love w/o the calories or work of making a crust. When we want a crust,I no longer make my own; I buy a frozen ready to use crust in the pan or pie crust dough from the refrigeration case at the store Response to www.verybestbaking.com/community/forums.aspx/,/community/forums.aspx/baking-forums_chocoholics-anonymous_thanksgiving-pies?plckFindPostKey=Cat:3473a929-a609-4b85-8818-bf915c7505deForum:bf0ad047-b08c-4e02-b7c9-c4adcdbbe36aDiscussion:187adbbf-e61f-4349-9cc5-ee4b7f93aaa1Post:c4481f65-2224-4fb5-90f5-352c42e709cf">Re: Thanksgiving Pies:

I love pecan pie.  Problem is I am the only one so if I get one or make one I eat the whole thing.  So I forego the pecan in favor of a Chocolate Silk pie or Truffle pie have also done a Peanut butter pie with a chocolate ganache.  I have never been a huge fan of Pumpkin pie, so often the crust gets soggy.  I have found a pumpkin crunch cake that is the best of both worlds.  Pie on the bottom and a crunchy crust on top.  I am pretty sure it is here on the site.  But it is made in a 13X9 pan.  Almost a double pie recipe poured into the pan then you sprinkle dry cake mix on top, I use either spice or carrot cake just for more flavor.  Last time I made it I decided that the next time I am going to do it a bit differently, the recipe says to drizzle the butter on the top of they dry cake mix, well I think I am going to mix the butter with the cake mix making it more like a crumble topping.  Will keep you posted if it turns out.
So I guess in our house the chocolate and pumpkin win.
