Had lunch with some friends this past week and I was treated to this wonderful cookie bar.  As I mentioned in an earlier post I think it would be better with some pecans. Nothing wrong with Maca

As Promised....A caramel filled gooey cookie bar.

Had lunch with some friends this past week and I was treated to this wonderful cookie bar.  As I mentioned in an earlier post I think it would be better with some pecans. Nothing wrong with Macadamia nuts, almonds or filberts either, any nut would be great.

Chocolate Chip Salted Caramel Cookie Bars
2 1/8 Cup flour
1/2 tsp salt
1/2 tsp baking soda
12 Tablespoons butter, melted and cooled to room temperature (yes that is 1 1/2 sticks)
1 Cup light brown sugar
1/2 Cup granulated sugar
1 large egg
1 large egg yolk
2 tsp vanilla extract
2 Cups chocolate chips
5 ounces caramel
Sea salt, for sprinkling over caramel and cookie bars
Pre heat oven to 325, grease a 8X8 pan or line with parchment
 In a medium bowl whisk together flour salt and baking soda.  Set aside
In the bowl of mixer mix melted butter and sugars until combined.  Add the egg and the egg yolk, vanilla extract and mix until smooth.
Slowly add the dry ingredients and mix just until combined.
Stir in chocolate chips.
Divide the dough in half.
Press half the dough into the pan, smooth out the top.
Pour caramel over the cookie dough.
Sprinkle with sea salt.
Drop spoonful of the cookie dough over the top of the caramel and spread gently until caramel is covered.
Sprinkle the dough with a bit more sea salt.
Bake bars for 30 minutes or until top of the bars are a light golden brown and edges begin to pull away from the pan.
Cool in pan on wire rack.
Cut into squares.

If you decide to add nuts I think 1 cup would be good, 2 might be better ;)

for the caramel either caramel ice cream topping or the little squares would be good.  For the little squares melt them with a bit of milk or cream.

This recipe is pretty much just a chocolate chip cookie dough with caramel between the layers. 
When making the Oatmeal Carmalita Bars the recipe I use calls for a few tablespoons of flour to be mixed in with the ice cream topping.  I think it helps "set" the caramel during baking so it does not ooze out when the bars are cut.  Either way, ooze or not these cookies are great.


By the way I think this could easily be doubled for a 13X9 pan.
