The Perfect Pie for Valentines Day.

Cookies are good, Cake is Great, Candy is Dandy but this is the Pie for your Valentine.

Truffle Pie
Truffle Filling:
2/3 Cup heavy cream
6 ounces bittersweet chocolate chips
1 (9 inch) prepared pie crust. Graham crust is fine as is a baked pastry or other favorite crust.

Whipped Chocolate Filling:
6 ounces bittersweet chocolate chips
1 1/2 cups heavy cream
1/2 tsp vanilla

Whipped Cream Topping:
1 Cup heavy cream
1/4 Cup confectioners sugar

Garnish:
1 1/2 ounces milk chocolate
1 1/2 ounces semi sweet chocolate
1 1/2 ounces white chocolate
(I omit the milk chocolate and use more of the white and semisweet)

For the Truffle filling, In a sauce pan bring 2/3 Cup cream to a simmer. Place the chocolate in a bowl and pour hot cream over chocolate. Let stand 1 minute, stir until smooth. Spread chocolate mixture over pie crust. Freeze or refrigerate for at least 20 minutes.

Meanwhile, for the whipped chocolate filling, in a double boiler or microwave set on low power, heat the 6 ounces of chocolate with 1/2 Cup of cream until chocolate is melted, stir often. Let cool to room temperature. In a chilled bowl, beat the chocolate mixture, remaining 1 Cup of cream and vanilla until soft peaks form. Spread whipped chocolate mixture over the Truffle filling in the pie crust. Refrigerate overnight.

For the Topping, just before serving Beat 1 Cup of cream until it begins to thicken, add the confectioners sugar and continue to beat until stiff peaks form.
Spread over the top of the pie.
Use a vegetable peeler and shave the white, dark and milk chocolate over the top of the whipped cream.

Yes this is not a pie to make often. Special occasions. Like Valentines day, Christmas, A birthday, An Anniversary, Groundhog day, The day I wash the car.
I like the fact that it looks very fancy and it is really very easy. Broken down into the 3 steps it can be done over the course of a day if you are short on time.

Off topic here but, for me, BIG NEWS!! Today I went to the 'fancy' grocery store in the neighboring town and, as usual, prowled through their cook ware and dishes section. Oh, wow - how I love that place. And I took a deep breath and bought a 9" spring form pan. Oh my goodness!! What a big step for me. I thought I already had one maybe 35 years old but haven't been able to find it.

And this store had Wilton loaf pans -- 5", 8" and 9". The 8" is the one I haven't been able to find anywhere except King Arthur Flour and they cost a fortune plus shipping.

Now please excuse me for butting in ..... lol .... the main reason I bought that $18.99 spring form fan was because I was thinking about Nikki'sTruffle Pie. I thought it required a springform!!

You can do it in a Spring Form pan if you wish. But there is no need the Truffle Pie can be done in a regular pie shell.
So if you don't think you will use it return the pan. If you will make a tart or cheesecake then by all means keep it.

That's my problem Nikki ....... of all things I do not own one single pie pan. ~blush~ . I have lots of pots and pans and COOKIE SHEETS but not a single pie pan. I can 't remember the last time I owned one.

Happy Valentine's Day to everyone (a little early). (Don't know if I will be able to get back in. Two days in a row did one question and got bumped out with the GOOEY message. Just went in through a different server and got in, surprisingly. It is getting very frustrating.
