Oatmeal Carmelita Bars

Here is the recipe for my Grandsons favorite.
Oatmeal Carmelita Bar
2 Cups flour
2 Cups quick cooking oats
1 1/2 Cup firmly packed brown sugar
1 tsp baking soda
1/4 tsp salt
1 Cup butter, melted
1 (12 ounce) package semi sweet chocolate chips
1/2 Cup chopped pecans

1 (14 ounce) bag caramels
1/3 Cup half and half  **See note below about caramel mixture**

Pre heat oven to 350 degrees F.
Line 13X9 pan with parchment paper or lightly grease

Stir together first 5 ingredients in a large bowl.
Add butter, stirring until mixture is crumbly.
Set aside half the mixture, about 2 3/4 Cups.
Press remaining mixture in bottom of pan.
Sprinkle evenly with chocolate chips and nuts.

In a microwave safe bowl heat caramels and cream at half power for about 3 minutes, stir and heat until mixture is smooth. Let stand 1 minute.

Pour evenly over chocolate chips and nuts.
Sprinkle with reserved crumb mixture.
Bake at 350 for 30 minutes or until light golden brown.  cool completely in pan on wire rack.  Cut into bars.

Alternate mixture.
1 Cup caramel ice cream topping
3 Tb flour.
Place ice cream topping in a bowl add flour and mix until flour is incorporated.
Pour over chips and nuts.

I never have half and half in the house and who wants to unwrap all the caramels.
The caramel topping I use is a very thick topping not the real thin stuff.  I think the one I used to get is Mrs. Richards or something like that, I have used Aldi's caramel topping for so long I don't know what others are on the market.

These sound absolutely delightful!  Thanks for sharing the recipe Nikki.  Maybe when we get back to some decent temps around here I can turn on the oven again.  Who thought that Illinois might hit 103 degrees, sounds(and feels) more like Death Valley temps lol.

I am in Illinois as well.
107 on the thermometer on my thermostat.
My lawn crunches when you walk on it.
I have been watering plants that I transplanted last year and a few I put in this year but I think I have lost 3 Tree Peony plants.
My heart goes out to the farmers.

I think we might get a break next week.  They are worth it!

Thanks for the recipe I will make it when it cools off .
In Nebraska it was 109 degrees yesterday. On the news
last night they talked about if we don't get cooler weather
and some rain we might be headed for another Dust Bowl
like in the 30s.

Nikki this is one that I plan on making after my oven is fixed.These sound very good.I'm wondering if I could make a no bake version of this,minus the flour and baking soda.I'd let this set up in the fridge.

I have never tried them as a no bake bar.  It might work using the melted caramels rather than the ice cream topping and flour mixture.

Here is a no bake bar for you.

No Bake Peanut Butter Bars
2 Cups graham cracker crumbs
1 1/2 Cups powdered sugar
1 Cup chunky peanut butter...(I use creamy)
1/2 Cup melted butter
1/2 Cup chopped peanuts
1 1/2 Cups chocolate chips
Lightly grease a 13X9 pan I line with parchment
In a large mixing bowl combine all ingredients except chocolate chips.
Press mixture into pan.
In a 1 quart sauce pan melt chips over low heat, stirring constantly.  Or melt in microwave.
Spread chocolate evenly over bars.
Chill before cutting.
Makes 30 bars.

sorry ya'll are so hot up there----------the high that was causing us in texas super heat  has moved up there------------and we have been enjoying 80 and 90 days for almost 2 wks

but it is moving back in this direction

I have made these before and they are good,in fact too good.I want to eat all of it.I'm making these for our family reunion along with other no bake items.Thanks again.

My Grandson will be pleased that you like them...and I am sure he would like a "finders fee" of 2 or 3 of them for sharing the recipe.
