Oatmeal Cake

1 1/4 c. boiling water
1 c rolled oats
1/2 c butter softened
1 c granulated sugar
1 c firmly packed brown sugar
1 t vanilla
2 eggs
1 1/2 c flour
1 t baking soda
1/2 t salt
1 t cinnamon
1/2 t nutmeg

Pour boiling water over oats; cover and let stand 20 minutes.  Beat butter until creamy and add sugars, beating until fluffy.  Blend in
eggs and vanilla.  Add oats mixture mixing well.  Mix flour, soda, cinnamon, nutmeg and salt.  Add to creamed mixture.  Pour into greased and floured 9" square pan.  Bake at 350 for 50 to 55 minutes.
For frosting:  combine 1/4 c melted butter,1/2 c brown sugar,3 T half and half ( I use milk), 1/3 c chopped nuts,3/4 c. shredded coconut
Spread over cake when it comes out of the oven.  Broil until frosting is bubbly.  Watch carefully.

Sometimes I increase the recipe by half and bake in 9x13 pan for 30 to 40 minutes
