Nikki's "Cookandy" - WOW

This is Nikki's post on another subject ......

Try this "cookandy"  (figure that's a good a name as any)
Place a peppermint patty between two cookies press to seal the edges.  Sort of like a mint ravioli.  I have used chocolate cookie dough and it tastes great.  If you want to make them real small, more like the recipe listed above by Nancy use Junior Mints and roll the cookie dough around 1 or 2 Junior Mints. 
A regular sugar cookie dough works great with this as well. A butter cookie dough, like a spritz would taste good but the dough may be a bit more crumbly.


I made these cookies this morning while DirectV was here ..... They aren't good - they are GREAT.  I mean the ones with the peppermint patty in between two layers of chocolate cookie dough.   LOL LOL LOL  they smelled so good while baking the DirectV man asked me what I was doing.  When I took the first sheet from the oven he was watching.  I offered him a cookie which he took with great delight.
When he left my house he was a happy man carrying a small bag of cookies!!   Merry Christmas.

I am sure if you ever have problems with the TV the same guy will be back to help out. Either that or they will be drawing lots to come for the repair. He probably has made a notation that there are treats involved with a call.

Well -- Not me!  I'm none too happy with these cookies.  Wink
I bake lots and lots of cookies, taste one or two and put the rest in my give-aways.
With these I can't stop eating .... I'm typing with my mouth full.
I really hoped to take them with me to church Bible study tonight ....... I don't think I'll have any left .........
or I won't fit into my little truck any more.   LOL LOL LOL

I sure recommend that everybody try these ...

These sound great - can't wait to make them.  Am planning on using chocolate cookie dough.  Chocolate and mint - mmm!

You are just about right!  Most of the things I bake I take out of the house, bring to a gathering, a friends house or a good portion goes into the freezer.
Sad thing is I make cookies and things and my husband would rather eat a box of store bought cookies than what I make.

I bake a ton of cookies and that sure made the guys building my barn last summer happy as I kept them well supplied!  Too bad they were all married Wink

I suggested this to my great niece.  She is a vegan, and saw a recipe that had an oreo inside a chocolate chip cookie.  She said that she could make vegan chocolate chip cookies.  Whatever!

Darn, I am not sure I could stop eating the mints while the first batch of cookies were baking. Guess I would have to buy 2 boxes of the mints. This sounds sooooo good.
