"New" Bar Cookie

My Grandson wanted some cookies yesterday.  It was a bit warm so I figured the best way was a bar cookie.
I made a batch of sugar cookie dough.  (It was from a mix)
I Preheated the oven to 350 just as the recipe stated.
I pressed the dough into the bottom of a 13X9 pan and tossed it in the oven for about 8 minutes.
While that was baking I poured a can of Sweetened Condensed milk in a bowl along with 2 Cups of chocolate chips.  Heated it until the chips melted and stirred until smooth.
Took the half baked cookies out dropped the chocolate over the top by the spoonful. ( the mixture was pretty thick so it was difficult to pour and spread.)
Put the pan back in the oven and baked another 20 minutes

Very good.  He named them Chocolate Wonder Bars.  We discussed what other cookie base would be good with the chocolate fudgy filling.  We really could not come up with one that would not work but decided that Peanut Butter cookie dough would be awesome.
I will write this out as a "real" recipe and put it in my recipe box so if anyone wants it you are more than welcome to try our Chocolate Wonder Bars.

Nikki, this sounds quick, easy and delicious, especially with a peanut butter crust. Good for you and your grandson!!

I have never tried a dried cookie mix, the next time they are on sale (Nov. or Dec.?) I will try one.  I thought they might taste like cardboard (older son would say that if I gave him "bought" cookies.

I usually don't buy packaged cookie mixes but I figured I wanted one to have on hand and it was on sale.  A huge bag for around $2.00.
I have not used it for cookies as cookies.  I made this bar cookie out of it and twice I made cookies to grind up for crumbs for a crust. 
But I would buy the mix again to have on hand. 
I will try the bar cookie using a peanut butter cookie base.  Home made of course.  And I also think these bar cookies would be great with an oatmeal crust.  Making them with a chocolate chip cookie dough is just obvious and we will do that as well.

I put the recipe in my recipe box but when I put "Chocolate Wonder Bars" in the search box it does not come up.
I guess you could click on my image and go to my recipe box to get it.
I will try again later if it still does not work I will post the recipe here.

Hi Nikki.  What a sweet Grandma you must be to bake your darling grandson some cookies.  I bet he was happy!  Sounds like a great recipe and one that the two of you will enjoy baking together over the years.

I use those packets of cookies all the time; but I usually add something to them.  The Molasses ones are DELICIOUS.  I wanted them to be a bit fluffier, so I added sour cream.  Just dumped in a couple of big spoonsful.  The P/B ones are so-so, as are the Pumpkin Spice.  I didn't add anything to them.  Next time I will "doctor" them up a bit.  The Oatmeal Choc. Chip ones are GREAT....added sour cream and extra DARK chocolate chips.  They were gone in a jiffy!!  Double Choc. ones are very good....I have never added anything to that one.  Hopefully, they will come out with some new flavored ones this Fall.

nikki-----------do you think your recipe for the dream cookies would do well baked in a pan instead?

i'm having withdrawal from them----------but cookies are beyond me alone mostly

Nikki, I was going to suggest oatmeal cookie dough as a base.  I've never bought cookie mixes as cookies are so easy to make.  I put them right up there with muffn mixes.  Never bought those either.  I think the oatmeal with chocolate and I'd add nuts, would be really good.
Remember they used to sell chocolate condensed milk.  I guess it didn't go over well because I don't see it anymore.  Just as easy to melt chocolate chips in the regular condensed milk.

I did them in a 13X9 pan.  I line with parchment.  Easy clean up!

My Grandson loves a bar cookie called Oatmeal Carmelita Bars.
It is an oatmeal base then caramel is poured over the base and chocolate chips are sprinkled over the caramel.  You then top with some of the base  that has been reserved.  I will suggest that we do the same thing with the base for the Carmelita Bars then use the Chocolate mixture in the center rather than caramel.
Oh just a thought...why omit the caramel add the chocolate along with the caramel.  Might be a bit over the top gooey but I am thinking it would be pretty darned good.
I will post the recipe for Carmelita Bars just in case any one wants to try them.
According to my Grandson every cookie we make has to measure up to the Carmelita Bars.

ok-------i baked the dream cookies again----------------using a bc triple chocolate fudge ----it already has mini chips in it but i added the others

i baked 1 pan without nuts for my d.i.l. and another w/ walnuts for me

put the rest in an 8-in round cake pan -------------i haven't tried to cut it yet------but it looks fine

also, it wasn't nearly as dry as when my grand nephew made it
