In Response to Re: "New" Bar Cookie:
Nikki, I was going to suggest oatmeal cookie dough as a base. I've never bought cookie mixes as cookies are so easy to make. I put them right up there with muffn mixes. Never bought those either. I think the oatmeal with chocolate and I'd add nuts, would be really good. Remember they used to sell chocolate condensed milk. I guess it didn't go over well because I don't see it anymore. Just as easy to melt chocolate chips in the regular condensed milk.

My Grandson loves a bar cookie called Oatmeal Carmelita Bars.
It is an oatmeal base then caramel is poured over the base and chocolate chips are sprinkled over the caramel. You then top with some of the base that has been reserved. I will suggest that we do the same thing with the base for the Carmelita Bars then use the Chocolate mixture in the center rather than caramel.
Oh just a thought...why omit the caramel add the chocolate along with the caramel. Might be a bit over the top gooey but I am thinking it would be pretty darned good.
I will post the recipe for Carmelita Bars just in case any one wants to try them.
According to my Grandson every cookie we make has to measure up to the Carmelita Bars.
