I want to recommend Nestles new Dark Chocolate morsels.   They are REALLY good.  The cookies I made are a true delight. I wish they came in a 12 instead of a 10 oz bag but that's

I've not seen the dark chocolate chips yet.  Maybe they are slow getting here

I looked at Target and Safeway today for the dark chocolate, no luck.  I wonder if they are test marketing the chips in your area?

 WinkLOL LOL Barbara --  If this area is a test market, thanks to me, the dark chocolate chips will get great sales reviews.

Nancy,    Mama's Divinity    Paula Deen   2005
4 cups sugar
1 cup light corn syrup
3/4 cup cold water
3 egg whites(large)
1 teaspoon pure vanilla
2 cups chopped pecans
In a heavy saucepan over medium heat, stir together the sugar, corn syrup, and water. Stir only until
sugar has dissolved. DO NOT STIR AFTER THIS POINT. Cook until temp. reaches 250 degrees on a
candy thermometer bringing it to a hard ball stage.
While the syrup is cooking, beat the egg whites until stiff peaks form. Once the sugar mixture reaches
250 degrees, carefully pour a slow steady stream of syrup into the beaten egg whites, beating constantly
at high speed. Add vanilla and continue to beat until mixture holds its shape, approx. 5 minutes. Stir
in pecans. Drop by spoon onto waxed paper. Store in airtight container for up to 2 weeks.
Note: In CA I have to cook until temp. reaches 260 degrees.  Enjoy
Note: I also use cherry, black cherry, and black raspberry flavoring instead of vanilla. Looks pretty and
really tastes great.

Nancy,  I posted the Mexican Bean Salad under Healthy Cooking and Baking. I am now
cross eyed from doing so much typing.

I wonder if you are in the test area for the dark choc. chips. I know that some companys
do that. Keep on buying those dark chips so it will come out to CA.

Barbara,   Nancy is going to keep on buying a lot of them so they will come out to us in CA.
She makes cookies all the time and I think she was going to make 100 cookies for Sunday
night. She's our Master Cookie Maker!!!
Did you survive all the rain that you got up there? You sure get a lot more rain than we do in
San Diego County!!!

Carol -- that's MY divinity recipe!!!  I "think" it's my ancient recipe with the amounts increased . When I started making it 260 degrees was beyond reach -- no candy thermo.  I used just the "hard ball stage".
It's never before occurred to me that I could double the amounts or anything.  I've always just made batch after batch - scrubbing everything clean and dry over and over.
I've never used a different flavor -- I've used only vanilla.

Dark Chocolate chips --- yep, I'm hoarding.  Sales are so good here in rural Missouri that Nestles won't send them anywhere elase!!

Carol, We have survived the rain with only a minor problem, however we need to get out the power washer to get the moss off of everything.  It is also very squishy outside.

Nancy,  My Mom's recipe was half of this one too so I just switched to this one in 2005
and have no problems. I always use the candy thermo. and also have a backup one.
I start beating the egg whites at 250 and they are ready by the time it hits 260. Now I
only have to make 3 batches instead of 6 at Christmas. It saves a lot of time.

Did you make it to the party with the 100 cookies or was the weather too bad?
You are hoarding the dark choc. chips!!! VBB tells us we have to ask the manager
of the store to order them!!! That is going to take time!!! Maybe we will see them by
July.

Hi Carol - lol lol lol .... I have two candy thermos too!   I am afraid I'll break one or it will quit working when I'm in the middle of cooking -- I gotta' have that spare.   Amd I'm so fortunate to have that great mixer - a very old Kitchen Aid - for all the cooking I do.

I made it to the party last night with no trouble .... went to church at 5 to help set up the dinner (my usual Sunday night art class for kids was cancelled because of space limitations) ...... about 8:30, when we were cleaning up, the snow started again.  Good grief. 

And my cookies did OK ..... It was cookies for 100 people, not 100 cookies.  Lots of left-overs for the young man who was honored.  It was a lovely time but I was worn out by the time I got home.

Nancy,   I was just going to tell you that there was 2 new ones!!! I have the dried cherries
that I got at Costco and I love cherries. The bark looks good too. I just wish that I could
find them out here in CA. I hope I don't have to wait months for them. You are so lucky!

Carol - last night I bought some peanuts, potato chips and pretzles so I can try that bark.    If I make it Saturday night I can give it out Sunday.

Nancy, I am surprised that your church does not have the largest congregation in the northern hemisphere.  You could entice anyone to join just for the cookies!  I would join for the cookies!

But it is very easy to make double batches ..... and it's very easy  to use two different "fillings"

I LOVE dark chocolate...I know my store doesn't carry them - I was just there on Saturday, studying the chips and deciding what to buy; I would have totally gotten the dark chips if they had had them!  I'll put in a request card; they are pretty good about honoring them!

Still can not find them.
I have searched 2 more Walmart's and 2 grocery stores.
Nancy, please stop purchasing them so they can make their way to other stores.

Nancy,  I still can't find the dark choc. out here. I have several of my friends looking at
other stores for them but they haven't been able to find them either. When I do find it
I'm going to buy a lot!!!
