Nancy, Try this one...Mounds Bar Recipe

I just found this recipe and I had to pass it on.  I have not made it yet but what can possibly be bad about it?
Mounds Bars
2 Cups Graham Cracker Crumbs
1/4 Cup Sugar
1/2 Cup melted butter
1 Can..14 ounce size Sweetened Condensed Milk
2 Cups Coconut
12 ounce bag Chocolate Chips..(This is where the Dark Chips would taste GREAT!!)
Pre heat oven to 350
Combine graham cracker crumbs, sugar and butter.  Press into 13X9 pan.  Bake at 350 for 15 minutes.
Combine coconut and sweetened condensed milk.  Spread over crust and bake for an additional 15 minutes.
Melt chocolate chips.
When pan is removed from oven spread melted chocolate over top of coconut.

I think the addition of almonds would also be great.  I would chop almonds and mix some in with the coconut mixture and then sprinkle some over the top of the melted chocolate.

If anyone has made this or makes it before I do let me know how it turns out.

Oh- wow- Thank you Nikki.......... this sounds great.
hmmmmmm it's 3:55 PM - I have to be a church - carrying food - at 6:15 .  I have every ingredient - and almonds.
If I hurry I can get these made.   Thanks again.

Thanks for the recipe Nikki.  That sounds so good!  Now I just have to invite people over who will take a bunch of it home with them so I don't eat it all LOL.

Nikki,  We love coconut and this recipe looks awesome. I love both Mounds and Almond Joy candy bars.

Last night when it was time for me to take off for church the chocolate topping was still very soft, still warm enough that it was almost liquid.
So I just could not take it with me .... well, rats.  The delicious stuff (I just ate some edging) is still in the 'fridge.  Now I have to figure out what to do with it.
It's a super recipe and well worth adding to any collection.

I made this last night as well.  I will make a few changes next time.
1. This could be done in a 9 inch square pan for thicker bars or double the filling portion of the recipe may increase bake time by 10 min. or so.

2. Add a bit of butter or oil to the chocolate chips so the chocolate does not crack when you cut it.

3. I dropped the filling mixture on the base with a teaspoon so the base would not break when I spread it.  That method worked well.

4. A bit of almond flavoring in the filling or coconut flavoring would make the taste a little more intense.

5. Decrease butter in the base and omit the sugar. I found the base does not need to be as sweet and there was quite a bit of butter that seeped under the parchment liner.  Or the other option keep butter the same and double the crumbs and make in 13X9 pan and increase bake time by 10 minutes.  If you increase base ingredients double the filling and increase that bake time as well.  And as long as all that has doubled double the chocolate topping.

This will be a keeper in my collection.  Will be fun to play with a combination of nuts with the coconut.

Nikki -- here's what I think about this very good basic recipe.

When  I was making it in the 9x13 pan I thought it should be in a 9x9 pan or the coconut filling
doubled..
I didn't have any trouble with the base breaking but there wasn't really enough filling to cover
it as thick as I like.  I want more filling.
And  IMHO chocolate grahams would be a lot better. 
Too bad I can't find a chocolate graham anywhere in this area.
The Nestle's Dark Chocolate was delicious as a topper.

Nancy, add 2 or 3 tablespoons of cocoa powder to the crumbs as you are processing them.  If you want a richer chocolate add a bit more cocoa.  I don't think you would have to reduce the amount of graham cracker crumbs.  Or use any chocolate cookie that is in the store and omit the sugar.  I really don't think the sugar is needed as there is enough in the graham crackers and enough in the sweetened condensed milk.

Judy - I don't even know what a Hy-Vee is - Tongue out 
But AFTER I made this stuff I was digging the the 'fridge freezer and found an unopened by of Nabisco Chocolate Wafers ..... really good looking very plain cookies.  They would have made a great crust. 
I wish I had something to make a great memory.
Oh well, I have crust for the next batch.
I took this batch to the church kids having a car wash this morning -- and a couple dozen donuts.
