Many years ago -- back in the early 70s -- I had a recipe for a dark chocolate frosting made with melted chocolate chips.  Somewhere along the way I lost the recipe and can't find one like it.&nb

Many years ago -- back in the early 70s -- I had a recipe for a dark chocolate frosting made with melted chocolate chips. Somewhere along the way I lost the recipe and can't find one like it. I can only find recipes that call for cocoa powder, chocolate squares or the pre-melted stuff. Does anyone have a frosting recipe that calls specifically for melting chocolate chips?

Sour Cream Chocolate Frosting

1 6-oz. pkg. semi-sweet chocolate chips

4 tbsp. butter

1/2 c. sour cream

1 tsp. vanilla

1/4 tsp. salt

2-1/2 c. sifted powdered sugar

Melt chocolate chips and butter over low heat. (I microwave them.) Blend in sour cream, vanilla, and salt. Gradually add powdered sugar and beat well, to make spreading consistency. (Add more powdered sugar if necessary.)

A great frosting or glaze can easily be made with just chocolate chips and cream.
A Ganache is easy and very tasty. Used very thin it is a glaze that will give a very professional look to your cake, torte or tart. Allowed to cool more the mixture will get thick enough to spread like a regular frosting. It can also be whipped to make a lighter fluffier frosting. Cool it even more and you can scoop it into balls and roll in powdered sugar, cocoa, ground nuts or any other coating for a Truffle candy. Here is a recipe that will make enough to thinly frost a 2 or 3 layer cake. I double the recipe and any leftover (ha ha) can be used for Truffle candy.
Ganache
3/4 cup whipping cream
8 ounces semi sweet chocolate
1 Tablespoon flavoring of choice , amaretto, Grand Marnier, peppermint Schnapps or vanilla
Place chocolate in bowl.
Heat cream in a small heavy pan over medium heat. Bring just to a boil.
Pour hot cream over chocolate. Allow to sit for a few minutes then stir until chocolate is smooth and shiny. Stir in flavoring.
To use as a glaze allow to stand at room temperature for 10 minutes before pouring over cake.
To use as a frosting or filling let stand at room temperature for 4 hours, or refrigerate until thick and spreadable. Mixture can be whipped at this point.

yum yum ..... I'm OLD and I've never tried anything "exotic" with chocolate. I have to try this. Thank you.

Another great frosting recipe is on the back of the Hershey's Cocoa Box. Simple but good just whip it then whip it more. The more it is whipped the lighter and fluffier it will get.
