In Response to Re: Italian Love Cake : Gale, We do not really care for ricotta, so I usually sub cottage cheese (I let it drain & squeeze the moisture out ) for pasta dishes etc.,do you think I could do the same for this cake recipe? I printed it out to try when the zucchinis are ready. P.S. I've made the zucchini dessert many times over the years & not one person has ever guessed that it was zucchini & not apples.

Hi Fran,I really don't know.I also some times sub the ricotta for cottage cheese in lasagna,because that is the way my family likes it.In baking I always use ricotta,it's rich and I always think of it as a desert item.I love cannoli's and some times I fill crepes with it too.I also make my own ricotta cheese.I don't think that I would do it.Ingredients are so expensive now and that would be such a waste if it didn't come out.Sorry.
