Italian Love Cake

1 chocolate box cake mix, 4 cups ricotta cheese,3/4 cup sugar,1 teas. vanilla, 4 eggs, 1 3.9oz box instant chocolate pudding ,1 cup of milk , 1  12oz.container frozen whipped topping thawed.  Preheat oven to 350*  Prepare cake mix according to directions on the box.pour into a greased 9x13 cake pan,set aside.Blend together well the ricotta,sugar,eggs and vanilla.Pour evenly over the cake batter and bake for 70 min.for a glass cake pan and 90 minutes for a metal pan.When baked allow to cool completely.Mix the pudding mix and milk until thickened and fold into the thawed whipped topping and spread evenly over the cooled cake.Refrigerate for 6-8 hrs.Serve and enjoy.The ricotta will sink into the middle of the cake while baking.

Sounds interesting.  I may have to try it.  I've never heard of adding ricotta to a cake before.

Do you have any history  or a story on this type of cake? The Italian weddings I've attended served ricotta pie, canolis  or a store-made  ice cream cake so this is  " new to me"...I hope to have an occasion to make this for; they're not Italian, but love good foodWink

I saw this someplace and I can't remember where..possibly All Recipes.  It looked "fanbulous".  thank you for reminding me of this.  Was looking for something different to make this weekend.

My friend gave me this recipe,the original recipe called for marble cake mix,but she loves just chocolate so she changed it.Her husband is Italian but she doesn't know if it is an Italian recipe?

Gale,  Thanks for taking the time to post this reicpe. I was talking to my Italian friend at Top's
about the Italian Love Cake and she had never heard of it but it sounded like a cake her Mom
had made when she was a little girl. She wants a copy of the recipe so I printed one for her too.
Thank you so much for the recipe. Need to pick up ricotta cheese and cake mix.

It sounds really interesting.  However it sounds like there are lots of calories involved. I'm afraid I will have to wait for a special occasion to make this.  Thanks for the recipe!

It sounds like it might be similar to the Upside down Chocolate cheesecake that is in the VBB recipes.  I've made it many times and it is always a hit.  The VBB recipe uses cream cheese instead of ricotta.

Gale,  I made the Italian Love Cake yesterday and it is really great!!! Hubby ate 2 pieces and said
this one is a keeper.  I worried that  baking it 70 min. would  make the edges hard but it was nice
and moist. I can see why they call it love cake!!  I loved it!!  Thank again for the recipe!!!

 Gale,
 We do not really care for ricotta, so I usually sub cottage cheese (I let it drain & squeeze the moisture out ) for pasta dishes etc.,do you think I could do the same for this cake recipe? 

P.S. I've  made the zucchini dessert many times over the years & not one person has ever guessed that it was zucchini & not apples.
