I don't cook much on the grill. It never seems done enough on the inside - compared to the outside.

Fortunately, because I live in southern California, I am able to grill all year long! I bbq at least 1 meal a week. And I have discovered the ease of foil-packets, which I use when making chicken, or fish that's on the thin side.

One family favorite is bbq chicken: for 1 serving, place 1 boneless, skinless chicken breast (pounded if it's thick) on a sheet of heavy-duty foil (or double regular foil); slather with your favorite bbq sauce (I use lots!); top it with a few slices of bell pepper (any color), a few rings of shallots, and a pineapple slice; bring up the long sides of the foil and fold over to seal, leaving room for air; then fold the remaining two sides to seal in the juices; bbq about 15 minutes on medium, indirect heat; no turning, no peeking! The trickiest part is getting the chicken to the plate while keeping the vegies on top!! I have prepped these ahead of time and kept in the refrigerator. Thirty minutes before cooking bring the packets to room temperature. And of course, you can vary the toppings as desired, whatever you like with bbq sauce. My brother-in-law likes plain food so I just put on bbq sauce for him.

I have my steaks for tonight on the kitchen counter.
My next bbq will be your chicken breast. Pineapple with bbq chicken ---- I'm hungry!!

Verlee, we in Northern California also grill year round. However, when it is really raining and cold outside I do have a grilling pan that I put on the range top. It works well especially if I make sure it is hot before I put the food on it.
We have a gas grill, so we don't really get the charcoal flavor, but that is fine with me.

We recently purchased an electric grill. My husband has MS and it is difficult for me to get the gas for a gas grill. So far, have made tuna steaks, turkey burgers, lamb chops, portabella mushrooms. All have been soooo gooood!!!

We grill year round in the San Diego area. We grill 2 to 3 times a week, sometimes 4.
Hubby loves to grill! Pineapple is awesome on the grill! I can hardly wait for some
good peaches with honey and cinnamon to grill! Yum! Yum!

Peaches on the grill? Huh? Carol better tell me how that's done. Just raw peaches make me very happy .... I can't wait to taste them grilled with ~ be still my heart - er, ah - be still my tummy ~ cinnamon!!!

My dinner tonight, the excellent rib eye steak, baked potato with sour cream and chopped Vidalia onion and the salad with tomato and red grapes. Oh, it was good.
And the steak was absolutely perfect. I did it! I bbq'ed!!

Nancy, Cut peaches in half, take out stone, drizzle with honey and cinnamon.
Put on grill and get them warm with nice grill marks on them. If you think you
don't have enough honey and cinnamon on them, add more before eating!
We always add more. I love honey and cinnamon!!

Nancy, I grill peaches also, and do not peel them or turn them. I do use peaches that aren't fully ripe and the grilling makes them sweet, juicy and oh, so delicious.

I love to grill outside in the summer time. It beats turning on the oven and there is a lot less to clean up afterwards.

Grilled peaches are great but you have to try grilling pineapple.
I have also placed a banana on a piece of foil added some nuts and a few squares of chocolate and a marshmallow. fold up the foil and place on the grill for a while. Not long, I turn off the gas grill and put the packet on when I take the food off. By the time you are done with dinner dessert is ready. Eat as is or pour over ice cream.
