Fudgy Peppermint Truffle Chocolate Cake

As promised here is the cake recipe.

Fudgy Peppermint Truffle Chocolate Cake
Filling:
1 Cup semi sweet Chocolate chips
2/3 Cup sweetened condensed milk.  NOT evaporated
1/2 tsp peppermint extract

Cake:
1 Box devils food cake mix with pudding in the mix
1 container (8 ounces) fat free sour cream....(see this might even be "healthy")
1/3 Cup vegetable oil
3 eggs

Icing:
3/4 Cup powdered sugar
1 1/2 ounces cream cheese softened
1 to 2 Tablespoons milk
6 hard peppermint candies, crushed

1. Heat oven to 350 degrees F.  Grease and flour 12 Cup Bundt pan.
    In a medium heat proof bowl, microwave filling ingredients on High for 30 seconds.  Stir until melted.  Set aside.

2. In large bowl of mixer, mix cake mix ingredients on low speed until combined; beat 2 minutes on medium speed.  Spoon batter evenly into pan.  Drop spoonfuls of the filling over the batter, keeping filling away from the side of the pan.

3. Bake 35 to 45 minutes or until toothpick comes out clean.  Cool in pan on wire rack 10 minutes.  Invert onto wire rack and remove pan and cool completely, about 1 hour. (center of cake may sink slightly during cooling)

4 In medium bowl, beat powdered sugar, cream cheese and 1 Tb milk with wire whisk,( or spoon) stir until smooth, adding more milk if needed.  Drizzle over cake, sprinkle with crushed candies.

High altitude: Heat oven 375.  For the cake add 2 Tb flour to cake mix, decrease oil to 1/4 Cup and increase eggs to 4.

(I sure hope this tastes as good as it sounds!)

Oh my! -- The only thing I love more than chocolate is mint.
I need the cake mix, sour cream and cream cheese and I'm ready to go

Nikki, I have everything to make this cake, but do you think it might be too much if I used the dark. cho.mint chips instead of the semi sweet?

OooooHHHHHHHH!   I think I am gaining weight just reading the recipe!   Now where can I hide it so husband won't eat it before I can get some after it is made? LOL

I think if you used the dark mint chips it would be great.  BUT omit the mint extract in the cake and I don't think you would need the peppermint candies on the top.  Pretty decoration but not needed.  (I am not a fan of hard candies crushed on stuff anyway, have a crown that is sensitive to biting down on real hard things.)

Jill you can.  I will submit the recipe.  After it has been submitted click on recipes, type in the name of the cake and it will be there.  Click on add to recipe box and it will be added to your recipe box.
I will post it right now.
The recipe is now in the system.

Nikki,  I will be trying your cake today!  I look at it this way.   Cocoa is a bean and beans are suppose to be healthy so thus this cake is deemed HEALTHY!  LOL

This sounds good but I don't like peppermint so I am going to use spearemint instead.
