Flourless Chocolate cake

I know there are lots of recipes for this, but I found this one to be really easy and has always come out good.

4 oz bittersweet chocolate
1 stick butter
3/4 c sugar
3 eggs
1/2 c cocoa

Heat oven to 375. Line 8" round pan with parchment.  Melt chocolate and butter; whisk in sugar.  Add eggs, whisk well.  Sift cocoa
over.  Stir in.  Bake 25 minutes.  Cool 5 minutes and invert.  Peel off parchment.  When totally cool, invert again onto another plate and
sift powdered sugar over for decoration.

I've taken a few liberties with the recipe occasionally.  Having no bittersweet chocolate, I used half unsweetened and half semi sweet. Works fine  I also beat my eggs in another bowl before whisking them into the chocolate mixture.

This sounds pretty much like the one I have used. 
I have found it easier even with the parchment to dust the pan with a little bit of cocoa. 
Topping this with a bit of raspberry or apricot preserves that you heat then strain and a layer of Ganache brings this to another level.  "To die for" !!!
I have found that when making Flourless Chocolate cakes the more simple they are the better.  I used to do one where you had to separate eggs then whip the whites....no need when this is so easy.

This is especially nice to take to a pot luck where you have "gluten free" friends.
