My favorite fudge

Maybe, instead of "my favorite fudge", I should call this Fast Fudge.

3 6oz bags of chocolate chips. ( I use 12 oz of semi-sweet and 6 oz of milk chocolate)
1 can Eagle Brand Milk
1 dash salt
1 cup walnuts or pecans

Melt the chips in a large bowl in the microwave. Stir in the Eagle Brand Milk, salt and
nuts. Stir well. Pour into an 8x8" buttered pan. (recipe say 8x8 ... I use 9x9)
Refrigerate until firm. (I cut mine when it's just "semi-firm")

Oh yum yum yum wanted a fast and easy one you must have been reading my mind, lol........could u keep my daughter in prayer she found out she has cancer of the uterus. Surgery is on Nov 30th. Thank you

Sharon ... I've been thinking about your daughter.... and you, of course.
Please remember, when you have time, to keep us informed about your dauhter - especially Nov. 30.

A few years ago when I was having a scary surgery my Internet woodcarving friends (USA, Canada, England and Australia knew exactly what time (in their time zone) when that surgery would start. They lifted up prayers when my surgery was starting. It worked - God heard and my surgery was an incredible success.

So - please let all of us know those details and we can start a timely prayer for her.

This came as a shock to me, a self described CHOCOHOLICbut one of my favorite recipes for fudge is not a chocolate one. Trail Mix White Fudge, I found the recipe in a paper several years ago and tried it and not only is it good it is beautiful. Don't be scared of the quantity of ginger in the recipe. And look for crystallized ginger in the bulk food section of the store or it is easy to make given a little time and sugar.
Trail Mix White Fudge
1/2 Cup dried cranberries
1/2 Cup dried apricots, diced
1/2 Cup roasted pistachios, coarsely chopped
1/2 Cup crystallized ginger, diced
2/3 Cup white sugar
5 ounces evaporated milk
1/4 tsp salt
8 ounces white chocolate chips
1 1/2 Cup mini marshmallows
Butter or spray an 8 inch square pan then line with foil or parchment paper, allow about 2 inch over hang on 2 sides to make it easy to remove fudge.
Place fruit, ginger and nuts in a medium size bowl.
In a medium heavy bottom pan bring milk, sugar and salt to a boil, simmer, stirring constantly until mixture thickens and begins to turn a light caramel color, about 5 minutes. Remove from heat and stir in marshmallows then the white chocolate. Stir vigorously until marshmallows begin to melt. Pour mixture into bowl with fruit and nuts and mix until all ingredients are distributed evenly.
Press into prepared pan. When cool and set cut into squares.

This is the first time that I'm attempting to make fudge was told that the fantasy fudge was really easy and the clerk @ store told me to get this and that I picked up a pkg. 12 oz chips instead of squares chocolate Would really like to know if the 12oz pkg. would it be the same as the 8 squares of chocolate Please Help!!!!!!!!!!!

If the squares are 1 ounce, as most are, then you would need 12 squares to make the 12 ounces in the 12 ounce bag of chips. If the squares you have are un sweetened add a bit more sugar to the pan when you start cooking it.
Save your arm and chop the squares into bits about the size of the chips or even a bit smaller or you will be stirring "until the cows come home". Fantasy Fudge or fool Proof Fudge is the way to go. No worring about temperature.

Hi Sharon T.So sorry to hear of your daughters illness.My thoughts and prayers will be with your daughter and also you during this most difficult time.Prayer is very powerful,I've been Ill for the past few years and prayer has always pulled me through,God bless you and your family.I left a message on another forum asking if anyone has a good peanut butter fudge recipe?

Thanks Nancy she is now having surgery Nov 23 and be out Nov 26 Going for test tomorrow and the stuff to drink the day before surgery. Will keep u all updated. Frank my son is now talking to me praise the Lord. He goes in this week for exploratory surgery on his throat some suspicious areas were showing. He has throat cancer stage 4 not brain cancer. He has had chemo and radiation and his spirits are up. I am so thankful to God for bringing him back into my life. Wish better circumstances but won't stop praying. Putting Frank and Charlotte in God's healing healing hands

My favorite fudge recipe is the one my mom always made for the holidays. The cooked recipe from Hersheys cocoa.
I make it with real butter and carnation milk. Turns out great if you can get it to just the right point to set up (I've had my share of goof-ups and my kids ate it with a spoon). I make it ahead of time and freeze it. I put waxed paper in between the layers. Does well til I can take it downstate to my kids for the holidays. It isn't Christmas without it!

I make peanut brittle -- that's an important part of a Christmas treat ...
Peanut Brittle, Fudge, Divinity and the sugared nuts.

That peanut brittle is made in the microwave!!

Sharon, I'm praying for your Charlotte and Frank. Whatever happened, maybe circumstances between you and Frank will now be better. Illness, sickness, etc. can sometimes do that, so I am also praying things get better between you. I don't need to know the circumstances because God already knows them, so He will know what I am praying about! And yes, like Nancy asked, please keep us updated! God bless your family....praying for you ALL!

Gale, I'm sorry.....I saw your post asking for the fudge on one of the other discussion boards and was going to post it later, but I totally forgot! Guess I'd better do it now before I forget again!

Peanut Butter Fudge

2 cups granulated sugar
1/2 cup water
1/2 tsp. salt

Cook to soft ball stage
Add 3 Tbsp. peanut butter and stir til it starts to thicken.
Pour into greased pan.

Note: Once you start stirring, it does thicken VERY quickly,
so make sure you have your greased pan ready ahead of time!

This is my older sister's recipe and it is delicious!!
Makes me hungry for some now!!!
