I always melt my chocolate in the microwave. one cup of morsels takes 1 minute.  I figure if the 16 oz of bittersweet chocolate is chopped and with the butter added it would probably take about 2 minutes.  For me that's a lot easier than the double boiler method.  faster also.

One of my favorite chocolate cake recipes is the VBB Upsidedown chocolate cream cheese cake.
The Double chocolate Treasures cookies I made a couple weeks ago comes pretty close to a favorite chocolate cookie.

I also love the chocolate flourless cakes.  Nikki, your recipe looks delicious,  I will be anxious to try it when I get back home, but first I have to lose the weight I am gaining on this trip!

But it has ONLY 1 measly tablespoon of sugar and ONLY 1 itty bitty tablespoon of flour....it can't be thaaaat bad!Wink
Enjoy your trip, the pounds will come off....they don't come on in a day and won't come off in a day. And as we all know now life is short and you never know what will happen.  I doubt seriously if anyone on their death bed has said I wish I hadn't eaten that slice of cake or I just knew I should have worked harder or longer.

Nikki,  I went to Aldi's in Holland, MI and got a 17 oz. bag of spaetzle for $2.49. I got a total of
5 bags!! I got Moser Roth dark choc. for hubby. There were 5 bars in the long box. Hubby ate
4 bars the night I got home.  He said it was the best choc. and I had 1 bite and it was awesome!!
It was made in Germany. I got another bar that was made in Austria.  You are so lucky to have an
Aldi's store.

Oh...Aldi's Dark chocolate is amazing!!!
Now it is bringing more thingd than usual
like muffin mixes,cookie mixes and even pie crust!
But i makemy own ,muffins.pie crusts.and cookies

I wish I would have got more dark choc., but you can only put so much
in a suitcase!  Holland, MI has an Aldi's on the southside of town and
will be opening another one on the northside in Nov.  Next year I will
go to both stores!! lol lol

Oh GALE; i've made this eclair cake for NEARLY 30 YEARS.I use sugar free intant pudding &(sugar free)coolwhip when available,I make my own sugar free chocolate frosting( Nestle's famous fudge recipe made w/ Splenda insteadof sugar(i twon't harden/set properly but works for this recipe.Theseeasy changes  reduce  the carbs enough that diabetic friends & family can enjoy a portion controlled p iece on their resticted diets KissGRANA

My favorite chocolate is chocolate eclair cake, this is so easy but it looks and tastse like you really bothered.Best of all no baking.In a 9 by 13 cake pan layer graham crackers, then vanilla pudding with cool whip folded in, another layer of graham crackers,more pudding ,another layer of graham crackers,spread chocolate frosting on top and chill for about 6hrs.or overnight.Enjoy

i made it a couple of weeks ago using a b.c. triple chocolate fudge cake mix----------a box of devil's food pudding mix and semi-sweet choc chips and walnuts------------------------i baked it in my jumbo muffin cups---------------and it was just like those triple choc muffins that my grand niece love from the grocers that are over a dollar apiece even when on sale---that i buy and freeze-------------------we cut them in half------------heat in m/w--------------and add a big scoop of bluebell home-made vanilla

Nellie, I have this recipe also, and it is one of our favorites.  I'm always collecting recipes that feature chocolate!  I like your idea of freezing them and using them as muffins.  Great idea.

Just about every recipe is my favorite......love to bake......love to eat what I bake......Chocolate just makes it that much better!!  Thanks to everyone who has or will post a great chocolate recipe!!

Hi  GALE G.  I love the CHOCOLATE CLAIR CAKE; made it often when our sons were stll @ home;  I sommetimes use dark chocolate pudding instead of vanilla & chocolate graham crackers= blackout cake OR death by chocolate cake; any & all  are  yummy.I 'veused pistachio  pudding& sprinled pisttachio nut pieces overthefrosting on  top( hubby loves pistachios) Kiss
It's  a great  caketo make in the summertime( no baking) l it's a super good do ahead for a POT LUCK!!!!!!!!!!!!!!!!!

That's A great recipe, easily made.....  I make it in  an 8"x8" pan; enough to feed 2 couples or a family of 4 !
I use dark fudge nstant pudding mix;chocolate grahams & top the chocolate frosting  w/ chocolate shavings= "
