Eureka!!!! At last.

For a very long time I have searched for a recipe for a chewy chocolate cookie like the one I have had from a Dominick's Store (Safeway store in other areas). 
In search of another recipe I saw being made I found it purely by accident. 
So I thought I would share.  (Nancy you will love these lots of nuts!)
Chocolate Chewies
Makes 2 dozen cookies.
2 1/4 Cup powdered sugar
6 Tb cocoa powder
2 Tb flour
1/4 tsp salt
3 egg whites
3/4 tsp vanilla extract
2 Cups toasted pecans  chopped very fine
1 ounce grated chocolate
Pre heat oven to 325 degrees F. 
Line 2 cookie sheet with parchment. This is a must!
In a mixing bowl beat powdered sugar, flour cocoa powder and salt. 
Add the egg whites and beat on high for 3 minutes. 
Add in the pecans and chocolate. 
Drop by tablespoon onto lined cookie sheets. 
Bake 15 to 18 minutes. 
Allow to cool on parchment before removing.

It is not a misprint that there is no butter or shortening in this recipe. 

I now have to go find the recipe I was originally looking for......a cheesecake made with goat cheese.

These really are good.  And for anyone that is baking for someone that is gluten intolerant the flour could probably be switched out or left out all together, after all it is only 2 Tablespoons. I would just increase the cocoa powder to keep the dry ingredients the same.  Or use more ground nuts.  I just might have to try this with toasted coconut.

Thanx for the recipe;I saved it in the hope of someday baking them for guests on a low fat diet,,,, The fat in the pecans is a "healthy " fat thatshould be O.K. for those peopleincluding hubby& myself(watching fat intake to  lower our cholesterol)The fat in the grated chocolate will be ignored by us !!!!!!!!!!!!!!!!!!!!!
