Double Peppermint White Chocolate Bark

Very recently - yesterday? -- some dear, active member showed us  two chocolate cookie recipes in Bob Appetit.  This afternoon I mixed up a batch of Chocolate Mint Cookies.  The dough is cooling in the 'fridge.
While opening a bottle of peppermint extract I saw a candy recipe on the back of the box.
Of course, I stirred that up too. .... lol.   It's delicious.
Many thanks to sent me on this mint trail :-)


DOUBLE PEPPERMINT BARK
1 Pkg. (12 OZ) White Baking Chips
1 tsp. Pure Peppermint Extract
8 to 10 drops Red or Green Food Color (optional)
1/2 cup crushed Peppermint or Candy Canes
Microwave chips in large microwavable bowl on HI
1 1/2 to 2 minutes until almost melted. Stir in mint
extract ... stir until chips are completely melted and
mixture is smooth.
Spread on foil-lined large baking sheet to 1/4" thickness.
Using a wooden skewer, swirl food color through bark.
Sprinkle with crushed candies, pressing lightly into bark
with skewer.
Refrigerate 10 minutes or until set. Break into irregular
pieces to serve. Store in covered container at cool room temp.

I left out food color and stirred the crush candy canes directly into the melted
white chips ... sprinkled extra crushed canes on top.
Next time I make it I'll add a touch more peppermint extract.

 Glad to see someone else has candy canes in April. I thought a box of 52 for $4.00 was a good deal until I went to that store after Christmas (looking for marked down canes) and the box of 52 was down to $1.00, there were 3 boxes so I bought 2 (I did not want to be greedy & buy all 3), I really like peppermint & believe it or not, I ate one last night.
Thanks for posting the recipe, I have made peppermint bark for over 40 yrs. but never thought to add the extract, I was afraid even the few drops would mess up the white bark, & never thought to use the white chips instead.  I will do this as a treat to myself after Lent.

 I forgot to say that I think the red & white would look great with green color swirled in for Christmas, & blue color would be nice for the Fourth of July.

I've never made any peppermint bark before.  Fran. what's your recipe? 
The extract does try to thicken the melted chips but I kept stirring.  It was thick when I spooned it out
on the cookie sheet but it still smoothed out very nicely.  It's PRETTY.

Before Christmas I bought box after box of candy canes .... I was carefull picky and bought the boxes
that had the darkest and most red color.  After Christmas, when the price went to half -- now 50 cents --
I stacked up a cart almost full.  Then they went to 25 cents and I bought the entire display.  
I had learned that kids love them all year long and a box of 12 canes goes a long way.

Nancy,  Wow another great bark recipe!  I don't have any candy canes. I printed the recipe
and as soon as candy canes are in stores, I will be making this. Thank you for the recipe!

What a great way to use up candy canes.  I love peppermint.  Of course now they have all kinds of other flavors too.

Carol - those little round circles of hard peppermint candy will work just fine ..... $1.00 a bag at WalMart.
Which makes me think of those Bob's Sweet Stripes --- soft, crunchy peppermint bites.  I think
those would be good in this recipe.

Nancy, Sorry I didn't think about those. I do remember seeing thoses at Wallmart but I try to stay away
from the candy aisle. I like Bob's Sweet Stripes, they just melt in your mouth. I will buy some on Wed.

Marie -- I make all sorts of bark -- probably 6 or 7 different varieties.   It's SO fast and easy.  And it's always pretty and always tasty.  
IMHO the only drawback is that it's expensive.  A whole bag of chips makes just a small batch of candy.

This site has many recipes .... for Easter melt white chips and stir in small jelly beans (or M&Ms).  It's so pretty and the kids love it.

Nancy,  The white bark with Easter pastel M&M's looks so beautiful and tastes so great.
Adults love it too!!!

Marie,  You have got to try this!! Barks are so easy to do in the microwave!!

This sounds great but as I don't like peppermint I would use spearmint in it you can get all kind of candy canes in favors now

I made the Bob Apetite chocolate mint cookies ..... My fault but I wasn't happy with them    In my 350* oven 15 minutes, as called for in the recipe, was too long.  Looking at the cookies while baking wasn't helpful because they are so dark and the edges are already established and firm.  (the recipe calls for no baking soda or powder),
I love the idea of mint extract in a cookie but next time I'm going to used one of my old, much used chocolate cookie recipes and the wonderful chocolate icing. 
I didn't like the way they tasted but they are oh, so pretty.

 For years I bought the 10# slabs of chocolate from the cake supply store (white, green, pink, yellow & of course cho.) I would have to carefully chop small pieces off to melt (now I buy Wilton discs & the 2# bars of almond flavor or white cho).  I would just crush the canes with my marble rolling pin, put the pieces on a cold cookie sheet & then pour the melted cho. & white cho. carefully over the candy & let it set up then break in pieces. 
  I would get the 10# Hershey cho. slab for for $10.00 & the colored slabs were cheaper (it was a better deal to buy the 10#).
Our kids had Easter candy that I made & only asked for jelly beans. I would make a lamb & use pink for the ears, & mouth & put a blue sprinkle for the eyes (with tweezers), did the same for the bunny, duck (had to use orange paste color for the beak & feet) & did orange carrots with green tops, it would take me a long time to decorate the candy, I would do it over several days when they were in school or sleeping & cookies were baking.
