Date Drop Filled Cookies

Make date filling:
Cook 2 c. dates, cut up, 3/4 c. sugar, 3/4 c. water.  Cool before using.

Cream 1 cup shortening, 2 cups brown sugar;  add 3 eggs and mix well.  Add 1/2 cup water and 2 t. vanilla
Stir in 2 1/2 cups flour, 1 t. soda 1/2 t salt.  Mix and drop 1 t  on cookie sheet.  Top with 1 t.  filling and then 1 t. dough
The dough on top about covers the date filling.
Bake at 350 for about 10 minutes.  Makes 30 to 50 cookies.

Thanks Judy.  They sound great and so easy.  I'll have to try these, if I don't eat all the dates straight out of the container first lol.

Judy,  Thank you for the date drop filled cookies recipe!  My mom used to
make date filled cookies and they were really good! Brings back wonderful
memories!  Have printed and will make soon.

Very similar to the ones made by my Mom and sainted Granny.  Now I can recreate the family tradition. 

Anyone heard of vinegar pie???

I had three coupons for dates and I bought the dates yesterday and paid a 1$ per bag! Great deal,looks like there will be date cookies in the near future.

Judy, I pretty much followed your recipe for the drop cookies but I made them as a bar.
While I was getting the dates ready I found I did not have a full 2 Cups but I had some figs.  So I used figs and dates.  the funny thing is I used more dates than figs but it was the fig taste that came through over the date flavor.
Because of the dates and figs I deluded myself into thinking they were "healthier" for me.
The recipe I followed also used some oat meal rather than all flour. I did like them but may try your dough next time.  May use dried apricots rather than dates or figs....all sorts of possibilities.
