Nikki - you said you were thinking about using an apricot filling ............. I don't have a single date (and I'll never have a fig ) but I do have a couple bags of dried apricots. How would I use those? Would I exactly follow the date steps ? Thanks

Yes follow the same steps for the apricots that you would for the dates.
You could use any dried fruit and follow the same cooking instructions. Pears, apples, apricots, peaches they would all be good. (Just dried not the ones that have been candied that would be way too sweet)
By the way if you ever see a fresh fig in the store you must try one. A totally different experience from the dried ones. If you are timid about the fresh one try splitting it and putting a bit of bleu cheese or other soft cheese on the fig and broil, grill or bake just until the cheese begins to melt. Yum!
