Chocolate Truffle Cookies 4 ounces unsweetened chocolate , chopped 1 Cup semi sweet chocolate chips 6 Tb butter 3 Eggs 1 Cup granulated sugar 1 1/2 tsp vanilla 1/2 Cup flour...(Not a typo just 1/2 Cup flour) 2 Tb cocoa powder 1/4 tsp baking powder 1/4 tsp salt 1 Cup semi sweet chocolate chips In a medium bowl, over a pan of hot water, melt the unsweetened chocolate, 1 cup of chips and the butter.  Set aside to cool In mixer bowl whip eggs and sugar until pale in color. Stir in chocolate mixture and vanilla. In a small bowl combine flour, cocoa powder, baking powder, salt, whisk until combined. Add the flour mixture to chocolate mixture, stir just until mixed.  fold in chocolate chips. Refrigerate overnight  Or freeze until mixture is firm, not frozen but firm. Pre heat oven to 350 degrees. On parchment paper lined cookie sheets use scoop to portion out dough.  1 inch balls. Bake 9 to 11 minutes.  Cool on Cookie sheets for 5 minutes before removing to wire racks to cool completely. A chocoholics dream come true.
