Chocolate Truffle Cookies

I just found this recipe and I thought I would share it.
Chocolate Truffle Cookies
4 ounces unsweetened chocolate , chopped
1 Cup semi sweet chocolate chips
6 Tb butter
3 Eggs
1 Cup granulated sugar
1 1/2 tsp vanilla
1/2 Cup flour...(Not a typo just 1/2 Cup flour)
2 Tb cocoa powder
1/4 tsp baking powder
1/4 tsp salt
1 Cup semi sweet chocolate chips
In a medium bowl, over a pan of hot water, melt the unsweetened chocolate, 1 cup of chips and the butter.  Set aside to cool
In mixer bowl whip eggs and sugar until pale in color.
Stir in chocolate mixture and vanilla.
In a small bowl combine flour, cocoa powder, baking powder, salt, whisk until combined.
Add the flour mixture to chocolate mixture, stir just until mixed.  fold in chocolate chips.
Refrigerate overnight  Or freeze until mixture is firm, not frozen but firm.
Pre heat oven to 350 degrees.
On parchment paper lined cookie sheets use scoop to portion out dough.  1 inch balls.
Bake 9 to 11 minutes.  Cool on Cookie sheets for 5 minutes before removing to wire racks to cool completely.

A chocoholics dream come true.

Thanks Nikki!!!!!  I just printed this recipe. I'm going to make these
for my husband for Valentine's Day. I wanted to try something new
and sounds really great!!!!

Now I need to get some binders and put them in order.

Nikki does this mean to we have to hope for more snow days so we can get
more great recipes???? I have my to try recipes with a rubberband around
them. I have 3 packs like this. I'm going to make the choc. truffle cookies and
the cream puff cake for Valentine's day. My husband never gains weight{dis
gusting} but I have to watch it all the time.

John, good to see a post from you.  I was a bit worried "hadn't seen hide nor hair from you" in a few days.  How are you doing?
I don't know where the recipe came from but if a recipe mentions CHOCOLATE I'm all over it!  So I cut them out and save them just waiting for a day to get busy and bake.

Just made a batch of these.  Here are a few tips.
1. If you put the dough in the freezer, watch them...It doesn't take long to set up!!
2.  These cookies do not spread very much.  In fact if you use a scoop they come out like little bon bons.
3. I was able to get about 2 1/2 dozen cookies from the dough.  I use an OXO cookie scoop, so a smaller one might make more cookies.
 Last but not least, these are the most chocolatey  cookies imaginable,  very rich.  If you love chocolate these are for you!!!!!

Hey Nikki -- I just stirred up my first batch of your Chocolate Truffle Cookies
I can't  taste a cookie until they get baked tomorrow morning
BUT the dough tastes great ..... better than any cookie dough I've ever tasted.
Oh - it's hard to keep from eating the whole batch.

That's my one complaint --- One batch.  It's a small, small batch.
What's your opinion about doubling everything?  I do want MORE.

And another thing .... I used the new little hand chopper (that was suggested on here) to  chop all
that unsweetened chocolate.  What a good thing to now own that.

We must all be on the same wavelength.  I also am making these now.  I have the chocolate melting over a pan of hot water.
I guess when the "Chocolate Urge" hits it hits hard.

I took  a deep breath, put all the chocolate and butter in a glass dish.  I set the 'wave at 70% and nuked it for 30 seconds.  Stirred hard, 15 more seconds, more stirring.  I kept doing that until the final stir.  It worked!!

Just can't wait to taste these .... and I have to have a big load of cookies at church Saturday.  I'll have all sorts of flavors and these will be my only new one.   People's reactions to these is going to be fun.

Truffles?  Are you going to roll yours in chopped nuts, powdered cocoa, anything?
