Chocolate Surprise Cake recipe (Sauerkraut)

There is an ongoing "conversation" regarding sauerkraut in another post, and I wrote that I would be posting this recipe. I have been making this for over 40 years and everyone loves it. I don't tell them about the sauerkraut until I know they are enjoying the cake.

Chocolate Surprise Cake

 

1/2 c. butter

1-1/2 c. sugar

3 eggs

1 tsp. vanilla

2 c. flour

1 tsp. baking powder

1 tsp. baking soda

1/4 tsp. salt

1/2 c. cocoa powder

1 c. water

1 c. sauerkraut; drained, rinsed, finely snipped

 

In large mixing bowl, cream butter and sugar until light. Beat in eggs, one at a time; add vanilla. Sift together flour, baking powder, baking soda, salt, and cocoa. Add to creamed mixture alternately with water, beating after each addition. Stir in sauerkraut. Turn into greased and floured 9 x 13 inch pan. Bake at 350, 35 – 40 minutes. Cool in pan. Frost with Sour Cream Chocolate Frosting (recipe follows).

 

Sour Cream Chocolate Frosting

 

1 6-oz. pkg. semi-sweet chocolate chips

4 tbsp. butter

1/2 c. sour cream

1 tsp. vanilla

1/4 tsp. salt

2-1/2 c. sifted powdered sugar

 

Melt chocolate chips and butter over low heat. (I microwave them.) Blend in sour cream, vanilla, and salt. Gradually add powdered sugar and beat well, to make spreading consistency. (Add more powdered sugar if necessary.)

Verlee,  I have printed this recipe, I don't like sauerkraut but I am willing to try. Thanks for the recipe.

I saw a sauerkraut cake made on a show on the travel channel.  Some town has a sauerkraut festival and one of the features is a cooking contest and the local bakery made a sauerkraut cake.
It make a lot of sense it will add moisture and once the sauerkraut has been rinsed and drained you can't tell it is there.  Sort of like adding zucchini you get the benefit from the moisture but you really can't taste it.

Verlee, you should add this to the swapped recipes so it will be easier to find in a month or more.  Click on the "My Recipe Box" then click on Add Recipe.  You can add the recipe and it should be easy to find later. I know I would like to add it to my recipe box.

This is a yummy cake.  I haven't made it in a long time so will need to get busy.
I found another sauerkraut  cake recipe in an old cookbook that used redhot candies to color and flavor the sauerkraut before adding to the cake batter.  It was fun and pretty and tasty but did not become one of our favorites.

My grandmother always made me a Chocolate Sauerkraut cake for my birthday!!!  It is my favorite!!!

A reminder of my childhood when we grew lots of cabbage.  We had a big crock of cabbage in the kitchen and ate it often. My mother also made kraut salad that was a big hit at potlucks.  My family doesn't like cabbage (what do they know?) but they don't recognize it when it turns up in soups and casseroles.

Nikki: Thanks for the suggestion to post the recipe in the Swapped Recipes. I never think about doing that. I just attempted posting it, but VBB is down for maintenance. I'll try again tomorrow.

I just tried twice to add the recipe for Sauerkraut cake and I get a message that things are "gooey with VBB", so I'll try again tomorrow.
