I've looked all over this site and I can't find where I talked about Chocolate Mint Divinity and I can't tell where I printed the recipe.  Rats.
But I did it!  I made that stuff this afternoon.  It's very good --- I will soon make it again and omit the peppermint and add lots of pecans.
I think this is a "plain" chocolate divinity would be even better.

That recipe came from Better Homes and Gardens.  They have some great recipes

Nikki -- I've been thinking about you.   You talk about peanut butter and chocolate and  you make truffles. Well, I finished the first part of PEANUT BUTTER TRUFFLES ......... it's in the 'fridge waiting to get solid so I can dip it in chocolate. That filling tastes so good .......... it doesn't need to be covered with chocolate.  It could be served with a spoon!! It's one of the Better Homes & Gardens recipe - wow! The major problem with all their recipes is they do not give temps --- just say "boil 15 minutes".  I hate that.

Nellie -- I made the chocolate mint divinity this afternoon.   It's very good - and very pretty.
I think it would be even better without the peppermint extract and the crushed peppermints.  I want to soon make it as plain chocolate divinity with pecans.
