Chocolate-Coconut Macaroon Pies

I thought I would post the pie I am going to be making for Easter in case anyone has a taste for coconut and chocolate.
Original recipe is for mini pies, made in mini muffin tins.  I think I may make this as a 9 inch pie rather than mini.
Chocolate-Coconut Macaroon Pies
Heaping 3/4 Cup sugar
Scant 1/2 Cup egg whites (from about 3 large eggs)
Scant 2 1/2 Cups Sweetened flaked Coconut
8 Ounces chocolate chips, semi sweet
1/2 Cup heavy cream
A few toasted almonds, chopped..for garnish
Heat oven to 359 degrees F.
Mix sugar, egg whites and coconut together.  Put a spoonful into each of 24 mini muffin cups.  Press the "dough" into the molds to make little cups, with sides and a well for holding chocolate filling.  Bake until golden, 12 to 15 minutes.  Let cool completely in the pans, then gently remove.
To make the filling, place chocolate in a bowl.  Heat the cream until just boiling, then pour it over the chocolate and let it sit for 1 minute.  Stir until smooth and glossy.
Fill pie shells by pouring in the warm chocolate filling.  Sprinkle a few almond pieces on top while they are still warm.  Let sit at room temperature for 1 hour before serving.  Serve the same day they are made.

You can make the pie shells up to 2 days in advance.  Chocolate filling can be made 5 days in advance just re warm over hot water until it is pourable.

This sounds so yummy!  Thanks for posting it Nikki.  I have a feeling the young ones will probably want the little version lol.

Nikki, Your choc.-coconut macaroon pie sounds great. I think I will make it in the 9 inch
pie plate. I love both mounds and almond joy candy bars. Thank you for sharing!!!!

Did you turn out ok at the doctor last friday? If you don't want to answer, that's ok too!!!

The Doctor's appointment was pretty funny. Since it was also for a physical he asked if I wanted to have a mammogram as well.  Saying that "new guidelines" don't necessarily recommend one every year.  Then he mentioned sending me for X-Rays on the hips.  I told him if I had to pick my radiation dose for the year I would rather have my hips done but I would bend over really low so they could do the mamo at the same time.
Got both done yesterday and will wait on results.  On a new anti inflammatory and it seems to be better than the Naproxen.  Will keep you posted on the hips.  Nice to know someone is worried Thanks!

Now for the pie.  I also am going to do it as a 9 inch pie.  I may also use more almonds as well.  I think the almonds and coconut go so well together then you add a decadent chocolate to the picture and that just makes it even better.
Let me know how yours turns out.

Nikki, You are too funny!!! Wouldn't it be wonderful if we could have two procedures done as one. I hope that the medicine helps ! Keep us informed  since you add so much to this site!

Nikki, I hope you don't get really bad news about the hips.  When I had mine x-rayed only the right one was bad.  The left one was perfectly normal, which was good news.  I'm hoping it will stay that way because one hip surgery is enough.  If your doctor had a good sense of humor he probably got a kick out of your suggestion for getting the 2 x-rays done at once.  If your anti inflammatories really help you now, you'll probably be good for several months before they don't help much.
If you need hip surgery I recommend being in as good shape as you possibly can be before you get it done.  You need all that muscle strength in your upper body and other leg just to get yourself in and out of bed.

Nikki, I am glad you don't have to have surgery yet!!!! I know you were worried about your husband if you had to have surgery!!!
I plan on making the pie for Easter but I might do a dry run before. Hubby would like that too!!! I will let you know!!!!

The darker the chocolate the "healthier" it is for you.  More antioxidants and there is less sugar in the darker chocolate.

Oh, what good news!  Nestles' new dark chocolate morsels are sooooooooo good.  Since they are so healthy  Wink I think I'll have a bowl of them for breakfast....  Ahhhh a bowl full with milk - now, that's healthy, right?

To obtain full healthy benefits with out adding extra fat use Skim milk.  Innocent
I strongly suggest heating the milk, this will facilitate the melting of the healthy chips allowing you to pour your breakfast into a mug and drink it on the go. Wink

Nikki,  I did the dry run. We are going camping this weekend and I thought it would be
a good surprise for my husband!! It is awesome and tastes just like an almond joy candy
bar. It was 89 degreees at noon today and there I am with my oven on. I used sliced
almonds on the top. It really looked pretty with the almonds on the top. It took longer
for the pie to set because of the temperature in the house. I was not going to put the
air conditioner on yet, it's too early for this heat!!!  Thanks again for the recipe!!!!  My
husband really loved it too.

Best news yet...talked to the doctors office today results of hip X-Rays everything is "normal" so I guess I must have done something working around the house that stressed a muscle or something.  So I will continue the anti inflammatory and take it a bit easier on the hips.
