Chocolate Chunk Oatmeal Cookies with Pecans and Cranberries

This is a great cookie, one of my husband's favorite.  It originally uses a 4 oz bar of bittersweet chocolate ( 60-62 cocoa) that you chop up into chunks, but I just used 1/2 bag of the Dark Choc

Thanks for posting the recipe Barbara.  These sound so good I have to try them too.

Was just sitting here reading the posts and I have an image of Nancy scurrying to make these cookies lol.   It's a good image Nancy, after all you are the "cookie lady"!  And we all love you.

I keep making a new batch or two............ I want these incredible things stock-piled in the freezer.

bahhhh ..... Yesterday I made a mistake trying to get ahead.  Chopping the cherries for this recipe takes time .... My little chopper won't work because the cherries are moist so I have to chop them by hand.......... a tiresome prochedure.
So yesterday morning I decided to go ahead and chop 4 bags.  Get the cherries all chopped, tossed into a small freezer bag, air squeezed out and stored in the 'fridge ready to go.
In the afternoon I was ready to make some cookies and happily took a cherry bag from the 'fridge ........ yuk.  I had squeezed that stuff into a solid ball.    Separating the sticky little chunks took just as much time as chopping them.
I will not chop cherries ahaead of time again.

Carol & Barb, I live in Mi.   (Our sons were born in San Diego, but that was  long ago) Our Target is not the super store & the prices for the food that they do carry is really high. Meijer got the dark cho. & mint morsels after the holidays (I bought a few bags because they were marked down) & never did get the holiday toppers in. They got a few of the Easter toppers in & I bought some even though the price was high. I asked about the dark cho. & was told the warehouse did not send them any & maybe I could try another store. With our gas as $ 4.39 a gal. I was not driving to another store just for the morsels

Fran,  I lived in Michigan for 45 years and lived in the Holland area. I live in the San Diego
area now. All my stores are within 5 miles of our home.  I do remember having to drive a
lot of miles to get to all the stores. I hope you find the dark chips soon!

This afternoon a lovely man from church called to tell me how incredible the Chocolate Chunk Oatmeal Cookies with Pecans and Cherries were.
He said they were the best cookies he's ever tasted --- and he politely asked for more - lol
 
And I can't remember if I told you the minister's wife asked for the recipe and said they were the best cookies she had ever tasted.

ok, found it.  I'll make them this afternoon if it rains.  If no rain, I'll be pulling weeds outside.  Cookies with oatmeal are wonderful.  I think I'll use cranberries and not bother to chop them, after the trouble Nancy had.

Weather this morning was good cookie making weather. I'm keeping the chocolate chunk oatmeal cookie recipe and putting it in with my favorites.  I have a notebook just for that purpose.

My family has a favorite ginger snap recipe.  My sister sends her grandkids back to college with a batch every time they come home. I'll dig it out and post it
