Chocolate Chip cookie

I got this recipe from the show The Chew.  The guest was Jacques Torres and he made this amazing cookie.
I got the recipe and it in now the only one my family will let me make. The only one my Grandson asks for when he is not asking for his Carmelita Bars.
This makes a HUGE batch of dough and it needs two different types of flour.

Jacques Torres' Chocolate Chip Cookies
2 Cups Cake flour
1 2/3 Cup bread flour
1 1/4 tsp baking soda
1 1/2 tsp baking powder
1 1/2 tsp coarse salt
1 1/4 Unsalted butter
1 1/4 Cup light brown sugar
1 Cup plus 2 Tb granulated sugar
2 large eggs
2 tsp vanilla extract
1 1/4 pound chocolate chunks or discs. I did use dark chocolate chips but next time I will use chunks or the discs.
Sea salt for garnish

Sift flour, baking powder and baking soda into a bowl and set aside.
In a mixer with a paddle attachment cream butter and sugars together until very light, about 5 minutes.
Add eggs one at a time mixing well between each.  Stir in vanilla.
Reduce speed to low, add dry ingredients and mix just until combined, 5 to 10 seconds.
Drop in chocolate mix in just until incorporated with out breaking them up.
Press plastic wrap against dough and refrigerate for 24 to 36 hours.
Dough may be used in batches and refrigerated for up to 72 hours.
When ready to bake:
Heat oven to 350 degrees F.
Line baking sheet with parchment or a non stick baking mat.
Scoop 6 mounds 3 1/2 ounce each ( a generous golf ball size )
Sprinkle lightly with sea salt.
Bake until golden brown but still soft, 18 to 20 minutes.
Cool a bit on the pan (10 minutes) then slip the parchment off with the cookies still on it and cool on wire rack..

Do not overbake these cookies.

I think the bread flour gives it a bit of a chew. That may have something to do with the size as well though.  I did make some that were a bit smaller and they also had a bit more of a chew than the other cookies I used to make.  They are not tough by any means.
This is a cookie that put my mixer to the test it filled the bowl.
