Chocolate Chip Cookie Recipe.

This is the recipe I found for Chocolate Chip Cookies.  Saw a show The Chew and this was made by New York Chocolatier Jacques Tores. The full recipe makes quite a large batch it can be cut in half easily.
Chocolate Chip Cookie
3 Cups PLUS 2 Tablespoons Pastry Flour
3 Cups bread flour
1 Tb baking powder
2 tsp baking soda
1 pound butter, softened
1 3/4 Cup granulated sugar
2 1/4 Cup packed brown sugar
4 large eggs
1 Tb vanilla
2 pounds chocolate chopped, or if you can find the round discs of chocolate, or I used dark chocolate chips.

In large bowl of mixer cream butter and both sugars for 5 to 7 minutes.  Add eggs one at a time beating well between additions.  Add vanilla.

In a large bowl sift together dry ingredients.
Add flour mixture to sugar mixture and mix until incorporated.  Do not over mix.
Stir in chocolate by hand.

Cover dough and refrigerate at least 24 hours.

Baking. Pre heat oven to 350 degrees F.
Line cookie sheet with parchment paper.
Large 4 ounce scoop of dough bake for 18 to 20 minutes
1 ounce scoop bake dough for 10 to 15 minutes.
Keep an eye on them co not over bake.

One question.  Can I sub regular flour for "pastry" flour?  The local stores have cake flour but I've never seen pastry flour.

Here's another question ----- On the very rare occassions I bought cake flour, I almost never used it so ended up throwing it away.
Is there any other use for such stuff?

Hi Nancy I just asked about this yesterday to VBB,My husband bought pastry flour my question was are cake and pastry flour the same.Their answer was yes.All purpose flour 1 cup = 1 cup + 2 Tablespoons cake flour.If you substitute the APF for the cake flour you have to subtract 2 Tablespoons example cake flour 1 cup = 1 cup - 2 Tablespoons APF I had this up like this and the post disappeared Sorry I don't know why that happened.????

Thanks Nikki ,another recipe to help use up 25# of pastry flour,I bet my husband watched the Chew that day.You know men act dumb,but they aren't.lol

Nancy, the substitute of 1 cup plus 2 Tb of all purpose flour for 1 cup of pastry flour would most likely work.  I think it is the addition of bread flour that really changes these cookies.  It gives them a bit more substance without making them tough.
If you do buy cake flour for a recipe and do not use it all just toss it in the freezer or make a batch of cookies with the cake flour. Brownies come out very well using cake flour.

Gale, I am sure he knew EXACTLY what he was doing when he got that flour!

I posted that formula how it is now I don't know what happened to it.The way it is now is the formula.If you buy the cake flour to use it up in other recipes using APF follow this 1 cup APF = 1 cup + 2 Tablespoons Cake Flour.I'm sorry for any confussion

Nancy, I've seen pastry flour in the bulk section of my Ny-Vee and Gerbes stores

Well - I went to the giant Walmart in a neighboring town and bought a 2 lb box of  cake flour.  That's what they had and that's what I'm going to try with these cookies.

Hi Judy -- we're almost neighbors but I've never before even heard of a Hy-Vee or a Gerbes. 
I shop the local  Finks, the  Fricks, the Schnucks and Walmart.
(yes, those are real grocery store names - I'm not kidding)

 RETAJ O; I think that  (1 cup minus 2 Tbsp)  is for using whole wheat flouri instead  of AP flour!; so many formulae; it gets confusing Undecided

by coincidence i also found a recipe on tv sat morn for the authentic neiman's cookies

The only need I've seen for cake flour is for my bread machine. It requires cake flour for most quick recipes, but that's it!!   Response to Re: Chocolate Chip Cookie Recipe.:
