Yes, Nikki --- when I'm making that fudge that calls for 2/3 cup of expensive coconut milk, I make two batches.
That stuff has to be boiled and boiled and boiled with a candy thermometer so it takes a long time to make two batches, but it's easy to get rid of :)

Nancy, I had to look up the recipe.  It sounds wonderful.  I just may have to make this when I get back from my trip. 
One of the people reviewing the recipe, and I know not everyone tries it then reviews so I take many of the reviews with a grain of salt, but one said to use evaporated milk rather than Coconut milk and increase the coconut extract.  Have you tried that?

Nikki -- no, I have not tried that and I don't plan to.  In my opinion - for what that's worth Tongue out - the coconut milk is absolutely vital to the taste and texture of this fudge.   It's a very special candy.

Stick that tongue back in your mouth...your opinion is worth quite a bit especially when it comes to cookies and candy.  I figure anyone that makes Divinity and as much fudge and cookies as you do has to know what you are talking about.  And I agree with you when it comes to an ingredient that is integral to a recipe I will not substitute, I either go to the store, delay my baking  or find another recipe.

lol lol lol ........... Nikki, this morning after another emergency trip to the dentist, I went to the "fancy" grocery in a neighboring town.  I HAD to find some canned apricots (for that delicious easy coffee cake).  Their macadamias were on sale!!
Walmart had completely dropped apricots and their macadamias are $7.98  a jar.  The fancy grocery always has them for $6.99 and today they were $5.79.   I use so many macadamias for that special fudge.  I made one batch with those cheap pecans and it wasn't half as good.
Speaking of divinity --- I haven't made any since Christmas.

Doubling that great recipe for Vanilla Macadamia Fudge was worth it ............ What fun I had after church yesterday giving awat all that candy.  Gee, I'm a popular woman - lol lol lol.
One dear woman came to me last night and said she had 6 unexpected people for lunch and just threw food together.  All that candy made a great dessert.

I've been having soooooooo much fun with the candy -- wish I had some new recipes.

I've never made bark.  After reading all these posts, I will have to try some after I have my conversion at the hospital tomorrow and  recoup.  Sounds sooo good. Thanks.

My wonderful Tiger Butter is made, cut into pieces, put into zip lock bags --- ready to go.
