I have a busy, busy day but when I have time tonight I'm making CRANBERRY NUT BARK.

I like the cranberry bark with white chocolate better than regular chocolate, for some reason. Good idea, Nancy! Bark is so easy to make and nice to have around the house and nibble on when you need a pick-me-up.

I'll use dark chocolate for this bark batch (lol) but I think any is good.  The white is always good but I think it's difficult to melt correctly.
This candy is so very good because it has both kinds!
And, rats, I was in Walmart 15 minutes ago and I forgot to get some dried strawberries - rats.

Not sure where I saw the recipe and I will try to track it down but I saw a bark made with white chocolate and lemonhead candy It looked so pretty it would be perfect for  a Bridal shower or Mothers day.  I am sure you have probably made it, I can't think of a bark that  you have not made!
Come to think of it you probably don't need a recipe for it you could just adapt a peppermint one you have.

Last night I made the Mexican Wedding Cake cookies and then went back into town looking for some dried strawberries -- no luck.  I went everywhere but could find none.   Then I sat in front of the tv to chop all the dried fruits I did have,    I'll get that candy made today.

That recipe is from someone on this board ........ oh, I wish I had written that on the recipe.

I've made the white chocolate bark with crushed peppermint candies of all sorts and with regular lemon drops -- delicious!!
I tried it with root beer barrels and with butterscotch drops -- I did not like either of those very much.

Thank YOU, Bakery ............ that's one of my very special, very favorite recipes!!     I use a combination of cranberries, blue berries, cherries and, of course, apricots.     This time, for the first time, I used a bit of dried pineapple too.   
That's such good candy !!

I think I posted the Lemon Bark recipe awhile ago, as I make it quite often. I just melt white chocolate in the microwave, and add lemon drops that I have smashed with a mallet. For my first batch, the lemon pieces were too big. So just keep that in mind. They are so lemony that even the slivers add flavor to the bark.

This is generally what my Lemon Bark looks like. I stir most of the lemon drops into the bark, and sprinkle a little over the top.

Geez, now I'm tempted to make bark but nobody will eat it but me and I sure don't need it lol.  Thanks for the ideas ladies.  Maybe I'll make some soon and find somebody to take it off my hands.

Last night I made two batches of that incredible Vanilla Macadamia Nut Fudge.  That great recipe fills a thick 9x9" pan full but the it calls for 2/3 cup of expensive coconut milk.  What can you do with the rest of the milk?   It will keep in the 'fridge for a day or two but ............
So I made two batches of fudge.   It's well worth the effort.

I just made coconut rice, saw the recipe on The Chew.   It used 1/2 water and a can of coconut milk.  Turned out very good.  I guess you could make some rice with the left over milk.  Maybe about 1 serving of rice. 
Or why not double the recipe of fudge so you use all the coconut milk.  If it is not quite double then make 1 1/2 the recipe.  Drop the extra by the spoon full onto parchment.  Those  will be for you.
