Chocolate Toffee Rum Cake

2 cups flour
3/4 c. baking cocoa
2 t. baking soda
1/2 t baking powder
1/2 t salt
1 cup butter softened
2 cups sugar
2 t. vanilla
1 cup buttermilk
2 eggs
3/4 cup sour cream
      chocolate rum mousse
2/3 cup English toffee sundae syrup
      Ganache

Heat oven to 350. Grease bottom and side of 2 round pans, 9x11/2 inches; lightly flour  Mix flour, cocoa, baking soda, baking powder and salt; set aside. Beat butter, sugar and vanilla on medium speed scraping bowl occasionally, until fluffy.  Beat in eggs until blended.  Beat in flour mixture alternately with buttermilk and sour cream, beating after each addition until smooth.  Pour into pans. 
Bake 35 to 38 minutes or until toothpick inserted in center comes out clesn. l Cool 10 minutes; remove from pans to wore rack.  Cool completely.  Make Chocolatae Rum Mousse.  Cut each cake horizontally to make 4 layers.
Place 1 layer, cut side up, on serving plate.  Spread with 3 TA of the syrup.  spread 1/3 cup mousse over syrup to within 1/4 inch of edge.  Repeat with remaining layers--except do not spread syrup or mousse on top layer.  Make Ganache; sp0read on side and top of cake. Store in ref\rigerator.

Chocolate Rum Mousse
2 cups heavy whipping cream
1 envelope unflavored gelatin
6 oz. semisweet baking cnocolate melted and cooled
1/4 cup rum (or 1 t rum extract and enough water to measure 1/4 cup
2 t vanilla
Mix 1/3 cup of the whipping cream and the gelatin in small bowl; let stand 5  minutes.  Mix melted chocolate and 1 cup of the whipping cream until blended. Stir in gelatin mixture, rum and vanilla.  Beat remaining 2/3 cup whipping cream in chilled bowl on medium speed untio soft peaks form; gently stir into chocolate mixture until blended.  Refrigerate about 2 hours or until thickened.

Ganache
12 oz. unsweetened baking chocolate , grated
1 cup heavy whipping cream
1 T butter
Place chocolate in medium bowl; set aside.  Heat whipping cream and butter to boiling in 3 quart saucepan over medium heat stirring constantly.  Pour over chocolate; let stand 5 minutes. Stir until smooth.

It took a while to get this put together but it is really good.  I think if I made it again I wouldn't use unsweetened chocolate for the ganache. I think bitter sweet would work well.  Also I heated my cream in a 4 cup pyrex measuring cup in the microwave.  I "grated" my chocolate in the food processor using the metal knife blade.  Worked well.
I hope there's no typos.  If you have a question, ask me.  My cake took almost 45 minutes to get done.

Judy...Thank you very much.
I have printed this out and I will be making this.  Possibly for my birthday.
I do like Rum but I think it would also taste good with Amaretto.  Have you made it using any other liquor?

On the other hand I may have to omit the liquor if my Grandkids are going to be having any.  So I just may use extract. Will be a toss up between almond and vanilla.  Don't think the kids would like rum extract.

Judy - I've printed this  (VBB owes me $$ for ink and paper!! Wink) but I'm a bit afraid to try it.  I've never made real mousse  and I've never even tried ganache.   It sounds so good and so pretty!

Nancy, you can handle a Ganache.  If you can heat up a pan of cream and chop chocolate you can make a Ganache.
Looks decadent, sounds decadent and tastes decadent but it is soooo easy.
Another that I call  "Stupid Easy"

Next time you make a batch of cookies make a Ganache and dip half the cookie in some still soft Ganache.  Let the rest firm up and scoop balls of it and roll the balls in powdered sugar, nuts, cocoa or anything you like.  These will be the best Truffle Candy you have ever had.

Take the plunge......
Look at it this way with Ganache it is Chocolate and cream how can it possibly be bad. Even if it "fails" the resulting product can be used for hot chocolate, adding to coffee for the most decadent mocha you ever had, adding to a brownie batter to make it more rich.  But it can not fail! that is the beauty of a ganache! No matter what "phase" it is in it is usable.
When you first add the hot cream it will look like you screwed up.  Let the chocolate melt and stir until smooth.
Used real thin it can be poured over a cake or cookies for a thin glossy coat of chocolate.
Used thicker you can dip items in the Ganache for thicker chocolate coating or spread on cake or use as a filling.
Used real thick it can be used as a frosting just as is or whip until it is a bit lighter.  Or scoop little balls of Ganache for truffle candy.

Give it a go..make believe we are in your kitchen and holding your hand.  That's how easy it is you can make Ganache with one hand! Laughing
