I know this is the brownie collection place, but I'm going to post a cookie recipe from the King Arthur Baking sheet. I haven't made it yet but it sounds really good. Chocolate, of course, and it has oatmeal in it for the healthy factor.
Double Chocolate Treasures
2 cups semi-sweet chocolate chips, divided
1/2 cup unsalted butter
3/4 cup sugar
2 large eggs
1 t. vanilla extract
2 cups old-fashioned rolled oats
1 1/2 cups flour
2 t. baking powder
1/2 t. salt
1/2 cup powdered sugar
Preheat oven to 350º. Have on hand 2 baking sheets lined with parchment.
In a heavy saucepan, or in a bowl in the microwave, melt 1 cup of the
chocolate chips. Stir until smooth.
In a large mixing bowl, cream the butter and sugar until light and fluffy.
Blend in the eggs, vanilla and melted chocolate. Add the combined
dry ingredients, mix, scrape the bowl, then stir in the remaining
chocolate chips. Shape the dough into 1" balls and roll in powdered sugar,
coating heavily. Place on the prepared baking sheets with 2 inches
between them and bake for 10 to 12 minutes. Remove from the oven
cool for 2 minutes on the pan, then transfer to a rack to cool
completely. Makes about 5 dozen.
