BROWNIE RECIPE COLLECTION

Now who doesn't like brownies; so why not start a collection of Brownie recipes.  I was looking at my Cookbook 2005 and I found 12 recipes for Brownies and OH MY do they sound scrumptious.&

Hi Susan,I love the Cappuccino cake brownies.They have a very rich chocolate flavor with a hint of coffee and cinnamon.They are not real sweet.I sprinkled them with a little powder sugar before serving.I might have to have another one with a cup of coffee a little later.Yum Yum !

You all are so very welcome!  I have about 10 - 12 more brownie recipes to post.  That is why I enjoy posting recipes because all of you appreciate and enjoy getting them.  It's fun!

Thank you for sharing your opinion on the brownie recipes that you try!  I have a pile of recipes that I want to try.  I just made the Peach Bread Pudding from Bakery1 and that was just wonderful.  I want to make this week the recipe that you posted for the Italian Wedding Cake.  I must get another container of Riccota, I didn't get enough when I did my grocery shopping the other week!

HAZELNUT BROWNIES

1 CUP BUTTER, MELTED
2 CUPS SUGAR
4 EGGS
2 TSP. VANILLA
1 CUP ALL-PURPOSE FLOUR
3/4 CUP BAKING COCOA
1/2 TSP. BAKING POWDER
1/4 TSP. SALT
1/2 CUP CHOPPED HAZELNUTS

FROSTING:

2 CUPS (12 OUNCES) SEMISWEET CHOC. CHIPS
1 CUP HEAVY WHIPPING CREAM OR REFRIGERATED HAZELNUT NONDAIRY CREAMER
2 TBSP. BUTTER
1/2 CUP COARSELY CHOPPED HAZELNUTS

1.  IN A LARGE BOWL, COMBINE THE BUTTER AND SUGAR UNTIL LIGHT AND FLUFFY.  ADD EGGS, ONE AT A TIME, BEATING WELL AFTER EACH ADDITION.  BEAT IN VANILLA.  COMBINE THE FLOUR, COCOA, BAKING POWDER AND SALT; GRADUALLY ADD TO THE BUTTER MIXTURE.  FOLD IN HAZELNUTS.

2.  SPREAD INTO A GREASED 13-IN. X 9-IN. BAKING PAN.  BAKE AT 350* FOR 30-35 MINUTES OR UNTIL A TOOTHPICK INSERTED NEAR THE CENTER COMES OUT CLEAN.  COOL ON A WIRE RACK.

3.  FOR FROSTING, IN A MICROWAVE, MELT THE CHIPS AND CREAM UNTIL THE CHIPS ARE MELTED; STIR UNTIL SMOOTH.  STIR IN THE BUTTER UNTIL MELTED.  COVER AND REFRIGERATE FOR 30 MINUTES OR UNTIL THE FROSTING ACHIEVES SPREADING CONSISTENCY, STIRRING SEVERAL TIMES.  FROST BROWNIES.  SPRINKLE WITH HAZELNUTS.  YIELD: 2 DOZEN

Susan, Thank you for another great brownie recipe. I love hazelnuts. This
sounds like a great recipe and the store(Sprouts) that I go to every week
has them in bulk. When I drank coffee, my favorite was hazelnut nonfat
dairy creamer.  This is right up my alley!!!!

I know what you mean!  I do my food shopping every other week and I always get the items that I need for baking.  I like to make something baked every week but with the way the prices are, I don't stock up unless I can find it on sale.  It's not getting any better!

MERINGUE COCONUT BROWNIES

3/4 CUP BUTTER, SOFTENED
1-1/2 CUPS PACKED BROWN SUGAR, DIVIDED
1/2 CUP SUGAR
3 EGGS, SEPARATED
1 TSP. VANILLA
2 CUPS ALL-PURPOSE FLOUR
1 TSP. BAKING POWDER
1/4 TSP. BAKING SODA
1/4 TSP.SALT
2 CUPS (12 OUNCES) SEMISWEET CHOC. CHIPS
1 CUP FLAKED COCONUT
3/4 CUP CHOPPED WALNUTS

1.  IN A LARGE BOWL, CREAM THE BUTTER, 1/2 CUP BROWN SUGAR AND SUGAR UNTIL LIGHT AND FLUFFY.  BEAT IN EGG YOLKS AND VANILLA UNTIL WELL BLENDED.  COMBINE FLOUR, BAKING POWER, BAKING SODA AND SALT; ADD TO CREAMED MIXTURE UNTIL BLENDED (BATTER WILL BE THINK).  SPREAD INTO A GREASED 13-IN. X 9-IN. BAKING PAN.  SPRINKLE WITH THE CHOC. CHIPS, COCONUT AND WALNUTS.

2.  IN ANOTHER LARGE BOWL, BEAT EGG WHITES UNTIL SOFT PEAKS FORM.  GRADUALLY BEAT IN REMAINING BROWN SUGAR,
1 TABLESPOON AT A TIME.  BEAT UNTIL STIFF PEAKS FORM.  SPREAD OVER THE TOP.

3.  BAKE AT 350* FOR 30-35 MINUTES OR UNTIL A TOOTHPICK INSERTED NEAR THE CENTER COMES OUT CLEAN.  COOL ON A WIRE RACK.  CUT INTO BARS.  STORE IN THE REFRIGERATOR.  YIELD: 3 TO 3-1/2 DOZEN.

CHIPS; MIX WELL. 2.  IN A GREASED 9-IN. SQUARE BAKING PAN, SPOON CHOC. BATTER IN 8 MOUNDS IN A CHECKERBOARD PATTERN.  SPOON SEVEN MOUNDS OF PEANUT BUTTER BATTER BETWEEN THE CHOC. BATTER.  CUT THROUGH BATTER WITH A KNIFE TO SWIRL. 3.  BAKE AT 350* FOR 25-30 MINUTES OR UNTIL A TOOTHPICK INSERTED NEAR THE CENTER COMES OUT CLEAN.  COOL ON A WIRE RACK.  YIELD:3 DOZEN Tomorrow I will post Blond Toffee Brownies! I am not sure how many brownie recipes I will get to post this week.  I will be having Pre-Admin. testing done (Mon.) and then I will be having surgery (Fri.) along with trying to get things done around the house.  I didn't want you ladies to think I am not standing up to what I promised!

Your funny...Don't worry about your girth!  You can make a variety of them, keep so many out for you and hubby and freeze the rest.  Then when that sweet tooth comes knocking, out comes some of those brownies from the freezer.  See Ann...it can work!!

Because i made peanut butter swirl brownies from Betty Crocker and i compared both recipes and they were the same!

PEANUT LOVER'S BROWNIE

1/2 CUP BUTTER, SOFTENED
3/4 CUP ALL- PURPOSE FLOUR
1/2 CUP GRAHAM CRACKER CRUMBS
1/4 CUP SUGAR
1/2 CUP SALTED PEANUTS, CHOPPED

BROWNIE LAYER:

3/4 CUP BUTTER, CUBED
4 OUNCES UNSWEETENED CHOC., CHOPPED
4 EGGS
2 CUPS SUGAR
2 TSP. VANILLA
1 CUP ALL-PURPOSE FLOUR

PEANUT CREAM TOPPING:

1 CUP CREAMY PEANUT BUTTER
1 CARTON (12 OUNCES) FROZEN WHIPPED TOPPING, THAWED
12 MINIATURE PEANUT BUTTER CUPS, COARSELY CHOPPED

1.  LINE A 13-IN. X 9-IN. BAKING PAN WITH FOIL; GREASE THE FOIL.  IN A SMALL BOWL, COMBINE THE BUTTER, FLOUR, CRACKER CRUMBS AND SUGAR; PRESS INTO PREPARED PAN.  BAKE AT 350* FOR 10-12 MINUTES OR UNTIL SET.  COOL ON A WIRE RACK.  SPRINKLE PEANUTS OVER CRUST.

2.  IN A MICROWAVE, MELT THE BUTTER AND CHOC.; STIR UNTIL SMOOTH.  IN A LARGE BOWL, COMBINE THE EGGS, SUGAR, VANILLA AND CHOC. MIXTURE.  GRADUALLY ADD FLOUR.  SPREAD OVER THE CRUST.  BAKE FOR 30-40 MINUTES OR UNTIL A TOOTHPICK INSERTED NEAR THE CENTER COMES OUT CLEAN.  COOL ON A WIRE RACK.

3.  FOR PEANUT CREAM TOPPING, WARM PEANUT BUTTER FOR 30 SECONDS IN A MICROWAVE.  GRADUALLY FOLD IN THE WHIPPED TOPPING; SPREAD OVER THE BROWNIES.  REFRIGERATE FOR 1 HOUR.  SPRINKLE WITH THE CHOPPED PEANUT BUTTER CUPS.  USING THE FOIL; LIFT THE BROWNIES OUT OF THE PAN; REMOVE THE FOIL.  CUT INTO BARS.  STORE IN THE REFRIGERATOR.  YIELD:2 DOZEN.

Coffee'n' Cream Brownies anyone...this will be the next recipe!

I ran across a couple really neat recipes today as my King Arthur Baking Sheet came in the mail.  I'll have to post a couple tomorrow.  it is too late tonight.
