Here's one I like ..........
PEPPERMINT PATTIE BROWNIES
24 small (1 1/2" York Peppermint Patties
1 1/2 cups ( 3 sticks) butter
3 cups sugar
1 tablespoon vanilla
2 cups flour
1 cup cocoa powder
1 tsp baking powder
1 tsp salt
Heat oven to 350*. Unwrap peppermint patties. Grease 9 x 13 pan.
Stir together butter, sugar and vanilla. Add eggs, beat until well
blended. Stir in flour, cocoa, baking powder and salt. Blend well.
Reserve 2 cups batter.
Spread remaining batter in prepared pan. Arrange mint patties about
1/2 inch apart in single layer over batter. Spread reserved batter over
Bake 45 minutes until brownies begin to pull from sides of pan. Cool
completely in pan on wire rack. Cut into squares - about 36 brownies.
Once when I was making them I decided more peppermint patties would
be better so I packed them on. That wasn't a successful idea ... the patties
were too thick and dried out.
