Now who doesn't like brownies; so why not start a collection of Brownie recipes.  I was looking at my Cookbook 2005 and I found 12 recipes for Brownies and OH MY do they sound scrumptious.&

I made the best brownies every and they where for the church bake sale and every one was sold .

MACAROON BROWNIES

1 CUP BUTTER, SOFTENED
2 CUPS SUGAR
4 EGGS
1 TSP. VANILLA
2 CUPS ALL-PURPOSE FLOUR
1/2 CUP BAKING COCOA
1/2 TSP. CREAM OF TARTAR
1/2 CUPS CHOPPED WALNUTS

MACAROON FILLING

1 PKG. (14 OUNCES) FLAKED COCONUT
1 CAN (14 OUNCES) SWEETENED CONDENSED MILK
2 TSP. VANILLA

FROSTING

3/4 CUP SUGAR
1/4 CUP MILK
2 TBL. BUTTER
1 CUP MINIATURE MARSHMALLOWS
1 CUP (6 OUNCES) SEMISWEET CHOC. CHIPS
1 TSP. VANILLA

1.  IN A MIXING BOWL, CREAM BUTTER AND SUGAR.  ADD EGGS AND VANILLA; MIX WELL.  COMBINE FLOUR, COCOA AND CREAM OF TARTAR; GRADUALLY ADD TO CREAMED MIXTURE.  STIR IN NUTS.  SPREAD HALF INTO A GREASED 13-IN. X 9-IN. X 2-IN. BAKING PAN.
2.  COMBINE COCONUT, CONDENSED MILK AND VANILLA; CAREFULLY SPREAD OVER CHOC. LAYER.  TOP WITH REMAINING CHOC. MIXTURE.  BAKE AT 350* FOR 40-45 MINUTES OR UNTIL A TOOTHPICK INSERTED NEAR THE CENTER COMES OUT CLEAN.  COOL ON WIRE RACK.
3.  FOR FROSTING. COMBINE SUGAR, MILK AND BUTTER IN A SAUCEPAN; COOK AND STIR UNTIL SUGAR IS DISSOLVED.  ADD THE REMAINING INGREDIENTS.  COOK AND STIR UNTIL MARSHMALLOWS AND CHIPS ARE MELTED.  COOL UNTIL MIXTURE REACHES SPREADING CONSISTENCY, ABOUT 25 MINUTES.  SPREAD OVER THE COOLED BROWNIES.  CUT INTO BARS.  YIELD: 4 DOZ.

Thanks for the Macaroon brownie recipe I will use the filling for all sorts of things.  I just might try it as the filling for the Carmelita bar that I posted a week or so ago.
I will also try it on top of a bar cookie. I think it would taste great on top of a chocolate chip cookie or a sugar cookie.

One of my favorites is not one that list - Saucepan Brownies.  It is super quick and yummy.  Needs no frosting.  They are not good keepers as my guys devour them very quickly.  Usually before they have a chance to cool.  The original recipe was on the back of the chocolate chips bag a few years ago.  I don't think I have seen it lately.

Double Fudge Saucepan Browmies
2/3 Cup All -Pupose Four
1/4 tsp Baking Soda
1/4 tsp Salt
1/2 Cup Sugar
2 Tblsp Butter or Margarine
2 Tblsp Water
2 Cups (12 oz pkg) Chocolate Chips - divided
2 Eggs, slightly beaten
1 tsp Vanilla
1/2 Cup chopped Pecans

Preheat oven to 325.  Grease a 9 in square or 7x 11 pan or line with waxed paper
Stir together flour, baking soda and salt.
In microwaveable batter bowl, combine sugar, butter and water.  Microwave til mixture comes to a boil.  Add 1 cup of the chocolate chips.  Stir until chips are melted.
Blend in eggs and vanilla.  Add flou mixture, blending well.  Stir in nuts and remaining chips.
Spread batter in prepared pan.  Bake 25 - 30 minutes or until brownies begin to pull away from sides of pan.  (toothpick test is not as reliable a sthe whole chips in the batter can give a false reading)
Cool completely in pan on wire rack before cutting.

It says cool completly -- my guys usually did not wait  - LOL
The new dark chocolate chips would be good in this

I keep my  printed recipes in a 3-ring notebook and I have three of them full.  It looks like I'm going to
get another one and lable it "Brownies"

MACADAMIA CHIP BROWNIES

1/3 CUP BUTTER
4 SQUARES (1 OUNCE EACH) WHITE BAKING CHOC.
2 EGGS
1 CUP SUGAR
1 TSP. VANILLA
1 CUP ALL-PURPOSE FLOUR
1/4 TSP. SALT
1/2 CUP CHOPPED MACADAMIA NUTS
1/2 CUP MILK CHOC. CHIPS

1.  IN A SAUCEPAN OVER LOW HEAT, MELT BUTTER AND WHITE CHOC.; REMOVE FROM THE HEAT.  IN A BOWL, COMBINE THE EGGS, SUGAR AND VANILLA.  ADD THE CHOC. MIXTURE, FLOUR AND SALT; MIX WELL.  STUR IN NUTS AND CHOC. CHIPS.
2.  POUR INTO A GREASED 9-IN. SQUARE BAKING PAN.  BAKE AT 325* FOR 30-35 MINUTES OR UNTIL TOP IS LIGHTLY BROWNED.  COOL ON WIRE RACK.  CUT INTO BARS. YIELD 1-1/2 DOZEN

GLAZED CHOC. CHIP BROWNIES

1-1/3 CUPS ALL-PURPOSE FLOUR
3/4 CUP BAKING COCOA
1/2 TSP. BAKING SODA
1/4 TSP. SALT
1 /2 CUP WATER
1 CUP (6 OUNCES) SEMISWEET CHOC. CHIPS

GLAZE

3/4 CUP SEMISWEET CHOC. CHIPS
1/4 CUP MILK
2 TBL. BUTTER
1-1/4 CUPS CONFECTIONERS' SUGAR
1 TSP. VANILLA

1.  IN A BOWL, COMBINE THE BUTTER, EGGS AND VANILLA.  COMBINE THE DRY INGREDIENTS; ADD TO THE BUTTER MIXTURE AND MIX WELL.  STIR IN WATER AND CHOC. CHIPS UNTIL COMBINED.  POUR INTO A GREASED 13-IN. X 9-IN. X 2-IN. BAKING PAN.  BAKE AT 350* FOR 30-35 MINUTES OR UNTIL BROWNIES PULL AWAY FROM THE SIDES OF THE PAN.  COOL ON WIRE RACK.
2.  IN A SAUCEPAN, COMBINE THE CHIPS, MILK AND BUTTER UNTIL CHIPS AND BUTTER ARE MELTED.  REMOVE FROM THE HEAT; WHISK IN THE CONFECTIONERS' SUGAR AND VANILLA UNTIL SMOOTH.
3.  COVER AND REFRIGERATE UNTIL FROSTING IS ROOM TEMPERATURE, ABOUT 20 MINUTES; FROST BROWNIES.  CUT INTO BARS, YIELD: 4 DOZEN.

Chocolate Raspberry Brownies

1 1/4 cups semisweet choc. chips
3/4 cup brown sugar
1 teaspoon instant coffee (optional)
1/2 teaspoon baking powder
1/2 cup margarine
2 large eggs
2 tablespoons water
3/4 cup all purpose flour
Topping
1 cup semisweet choc. chips
8 ounces cream cheese, softened
1/3 cup seedless raspberry preserves
1/4 teaspoon instant coffee (optional)
1/4 cup powdered sugar

Brownies: Melt choc. chips and marg. in small saucepan, allow to cool. Beat brown
sugar and eggs together. Add choc. mixture and coffee mixed with water, mix well.
Stir in baking powder and flour. Blend well. Bake in greased 8x8 inch pan at 350
degrees for 30 to 35 minutes.  Let cool

Topping: Melt choc. chips with instant coffee in saucepan over low heat. Set aside.
Beat cream cheese until fluffy, add powdered sugar and preserves.  Beat until
fluffy. Beat in choc mixture until blended. Spread over the top of cooled brownies.
Chill at least 1 to 2 hours.   Cut, plate, and enjoy!!

Mary -  I'm in the process of changing 90% of my "sweet" recipes from Semi-Sweet to Dark Chocolate ... I haven't done brownies yet but I will and I have great confidence they will be great.
