This is the Chocolate Cranberry pie that I mentioned in another post.

Again another winner as far as I am concerned from King Arthur Flour.
the combination sounds a bit odd but they work together very well.

Cranberry-Fudge Pie
Crust:
1 2/3 cups graham cracker crumbs
1/4 Cup confectioners sugar
5 Tb butter, melted
Filling:
1 Cup semi sweet chocolate chips or chopped semi sweet chocolate (do not use bittersweet)
2/3 Cup heavy cream
3/4 cup diced walnuts or pecans
Topping:
1 cup sugar
1/8 tsp salt
1 1/2 cups cranberry juice (water will work as well if you have no juice)
1 Cup dried cranberries
12 ounces fresh or frozen cranberries, a generous 3 Cups
Directions:
Pre heat oven to 375 degrees F.
To make crust process crackers, sugar and melted butter in processor or a bowl until crumbly and well combined.
Press into bottom and up the sides or a 9 inch pie pan.
Bake crust about 7 to 8 minutes, until set but not brown.  Remove from oven and cool.

For filling: Place chips and cream in microwave safe bowl and heat for about 90 seconds.
Remove from microwave and stir until smooth. (This is a basic ganache)

Spoon filling into cooled crust and sprinkle nuts on top.
Refrigerate pie for at least 1 hour, probably 2 until filling (ganache) has firmed.

While pie is chilling make topping.
Bring sugar, salt, and cranberry juice or water to a boil.
Stir in dried cranberries and simmer 5 minutes.
Add the fresh or frozen cranberries and simmer 5 to 7 minutes or until some of the berries burst.
Remove from heat and chill.
spoon 1 1/2 Cups onto the top of the pie.  (You will have left over topping use this for a chicken or pork dinner.)

Makes 8 to 10 servings.


I did this more as a tart I used a 9 inch spring form pan, pressing the crust about 1 1/2 inches up the side of the pan.  Very easy to get off the bottom of the pan and a nice presentation.

My family is not too fond of cranberries but is sound interesting.

The Chocolate portion of this pie as well as the crust is great even without the cranberry topping.  If you are not sure of it halve the recipe for the topping and just use a bit or spoon it over the top of a slice of the pie.  You would still get the great flavor but it would be easy enough to omit if you do not like cranberries.  Or use a mixture of cranberries and cherries, still a great taste but not quite as tart. The mixture of cherries and cranberries would still be a great pairing with pork or chicken so you could use the extra with a meal as well.
