Another Bar Cookie.....

I got this recipe in an email this morning from a local store.  It sounds so good I thought I would share. 
Triple Chocolate Strawberry Cookie Bars
  1 box, 12 ounces Vanilla Wafer cookies, about 2 3/4 Cups of crumbs
 3/4 Cup chopped slivered almonds
1 Cup butter, melted
1 can, 14 ounces sweetened condensed milk
1 Cup milk chocolate chips.....See below.....
1 Tb butter
1 jar, 12 ounces  seedless strawberry jam......see below.....
6 squares, 1 ounce each white chocolate
5 squares, 1 ounce each semi sweet chocolate
3/4 Cup heavy cream
Heat oven to 350 degrees F. 
Grease and line with parchment a 13X9 pan
Combine cookie crumbs, almonds and melted butter in a large bowl; mix well.
Press into pan.
Bake 15 minutes
Combine 2/3 Cup sweetened condensed milk, chocolate chips and 1 Tablespoon of butter in a microwave safe bowl.  Heat 1 minute or until chips melt.  Stir until smooth. 
Spread over baked crust. 
Chill 15 minutes. 
Spread jam over chocolate layer; chill 15 minutes. 
Combine remaining sweetened condensed milk and white chocolate in a microwave safe bowl.  Heat until chocolate melts, stir until smooth. 
Spread evenly over jam.  Chill 30 minutes. 
Melt semi sweet chocolate with cream stir until smooth.
Spread evely over white chocolate. 
Chill 1 to 2 hours before serving. 
Makes 36 bars
(ha ha ha)

****The changes I would make, and this is without making it to begin with...
Semi sweet Chocolate rather than Milk chocolate
Dark Chocolate rather than the semi sweet chocolate
Raspberry jam, seedless rather than strawberry

I was looking for an excuse to invite people over for dinner this weekend and this just might be dessert.

But if it did not sound good there would be no nobility in the sacrifice. 

If there were no recipes posted for a week you probably have enough cookie dough in your freezer to keep Cookie Monster happy for a month.

I think milk chocolate is just too sweet.  And in this case with the sweetness of the jam it would be just overly sweet. 
If you wanted even more of a contrast for the topping you could probably use 3/4 semi sweet and 1/4 unsweetened. That would probably get you pretty close to the dark chocolate though.

Well I just got back from my Aldi's shopping trip.  I did forget the vanilla wafers but I got everything else.  I did not get raspberry jam I found something a bit more interesting....Fruits of the Forest it is a reduced sugar fruit spread.  Contains Cherries, blackberries, raspberries, red currants.  I think it will taste very good on these bars. 12 ounce jar $1.99.  And not that I want to change the whole recipe I bet any cookie would work for the base.

Nikki -- I planned on trying this recipe this evening .....lol..... I went shopping this morning and I forgot the vanilla wafers.  I have nothing similar.

Maybe you could use graham cracker crumbs instead of vanilla wafers.  That would cut the sweet a little.

At this moment Nancy you're wrong...I just used the last of the graham crackers for the chocolate tart I made last weekend. Almost any other time you would be right.  Although since my Grandson has not been here I do not keep my baking supplies as well stocked as before.

Alright I am in the process of making these now. 
The base was fine no problems there. 
The first chocolate layer, no problems there either. 
The 12 ounces of jelly seems a bit thin but it covered the chocolate layer and I guess it will be alright. 
Now the problem layer....the white chocolate did not melt quite as smoothly as I would have liked.  It is also difficult to spread on the slippery jelly layer. It is also a bit sparse in some spots, as in bare spots. I guess it will be fine as the top and final layer of chocolate will cover any bare areas. 
Will keep you posted as to how it tastes as that is the most important part.
