why does my yeast rolls turn out bad

Sorry to hear about your problem Sue.  I know if the water is too hot it will kill the yeast but I've never had a problem with it not rising the second time.  But then I don't do much yeast baking these days.  Maybe it wasn't warm enough where you had the dough the second time? 

Hopefully one of our VBB friends who does bake with yeast can come up with a solution for you.

Just a few hints that I use for yeast baking.  Be sure to place the yeast dough in a warm, not hot place.  I often turn on the oven to the lowest setting for a few minutes, then turn it off. If it seems too hot I leave the oven door open for a few minutes, then I place the dough in the oven and close the door.  There should be no drafts where ever the dough is rising.   Some times it takes longer for the dough to rise than it says in the recipe.  You need to be flexible.  Poke two fingers in the dough when you think it is ready, if the holes do not close up it is probably ready.  Or in your case perhaps the dough " over rose" and the whole thing collapsed.  In that case the gluten structure in the dough could not hold it up.  Some times there is a delicate balance between rising enough and rising too much.  I'm not sure if any of this helps, but don't give up!! Next time could be perfect.

I think that Barbara B might be onto your problem.  If the dough rises too much it may not rise properly the second time.
Also with yeast it might depend on the type you are using.  Are you using a Rapid Rise or a regular yeast.  Also even if the dates are still good there may have been a problem either in storage or manufacture you might want to email the company and find out if there have been other reports of dough not rising properly.
What do you mean when you say it tastes ugly (I think that is what you mean) Is it that there is no flavor to the dough?  You might want to try making the dough and allowing the first rise to be very slow, either place the dough in a cooler location or even in the refrigerator to rise over night.  The slow rise will allow more flavor to develop and with a slow rise you will be less likely to have it over rise.
If you have not done much bread making it will come with practice.  I never had much luck with it but I have done more in the past 2 years and I am getting better.

i have made bread, it has turned out great. first time with rolls, i used reg, and rapid yeast, a bag of flour. i  will try the refrigerator, as for taste i went ahead put in oven baked, no flavor .thank you

Sue, a site that has been a great help to me as far as bread baking goes is King Arthur Flour.  http://www.kingarthurflour.com I went to a baking session they gave a few years back.  They made bread and they made it look so easy I though if they can do it standing in a conference room I can do it in my kitchen.  I tried that weekend and low and behold I made a bread.  It was a sweet bread recipe, for cinnamon rolls and it was great.  They also have on line chat help if you have any questions.
By the way you can add flavors to the dough, rosemary, cheese, eggs and butter also change the flavor and add richness.
Don't give up! it is fun and well worth it.  After all a few cups of flour and a pack of yeast is pretty inexpensive so you can experiment and it will not break the bank.

Interesting and helpful comments. I don't use yeast as much as I did when I was younger. There really is nothing like bread made with yeast. I too will check out the King Arthur website and maybe will start "yeasting" again. Thanks.

Angela you are going to love the recipes on the site.  I have tried several and every one I have enjoyed. Not just yeast dough but cookies, cakes, pies and they do have a selection of gluten free recipes.
I find some of their products expensive.  I have not purchased a lot from them.  Many of the flour products are in local grocery stores but most of the specialty items are on line.  But I certainly do not need to buy their parchment paper or their crystallized ginger to make a recipe as I can get them for less at a store rather than on line.

Nancy, you are $o right about that.  I have found that Bed Bath and Beyond has a lot of gagdet$ and trinket$ but with the 20% or $5.00 off coupons it helps.
It i$ fun to look at the item$ they have though!

What Barbara B said.  If it is only one recipe that doesn't taste good, don't use that one again and try a different one.  I make a lot of yeast things that really don't have a first rise.  There's a 10 minute "rest", then the dough is shaped as desired and allowed to rise.  Always comes out great.
In fact this evening I'm teaching a class on how to make cinnamon rolls for the Adult Ed program.  I've dont it for years and most of my students have never used yeast and their rolls always come out good.
You can tell if your first rise is too much as the dough will be really very light and sometimes if you touch it it will collapse.  Try a recipe that has a rest and a rise.  I think you'll like it.  Doesn't take as much time either.

i just could not under stand why my rolls did not rise. i went to the store got more yeast, made a new batch ( yummy) i also notice i had more yeast than i did the first batch i made. i also notice more of smell of yeast. so im thing i did not have the right amount of yeast. gosh never every had trouble making bread. any way thank you all, for the help, my rolls turn out great

I made a loaf of Hungarian white bread today and it was a flop lol.I always make nice looking and tasting bread. I know why it was a flop I let it rise too much the first time.Tomorrow I will make another loaf.My son ate my mistake and enjoyed it.I tasted it and it is a very nice hearty loaf of bread.The outside is nice and crusty and the inside was nice and fluffy.If I can correct my mistake and it turns out well I'll post the recipe.I think the reason your rolls didn't bake up right was due to letting it over rise the first time.

Mine raised, may be too much, They don't have much flavor and  are like bread, no soft stretch. I try this about once a year and always have the same results, different recipe's. Am I not kneading the dough it enough???

Yeast dough seems a little intimidating at first.Once you get the hang of it you'll do it without even thinking about it.I think a good way to get used to using yeast dough is to buy the frozen stuff and practice with that.Once you have the hang of that just start making your own dough.My sons both worked at Subway and they always made the bread several times a day .It is frozen bread but still they learned about yeast dough this way.Now both can make bread from scratch.
