I don't have vanilla pudding mix and it is too hot to go to the store..what can I substitute for it?

Retaj O, first of all welcome back, I have not seen a post from you in a long time I hope everything is well.

Now, what are you making?  Do you just want pudding or is this for a cake or other recipe that you use it dry?

Pudding's used to make the cake moist.  Substitute sour cream or plain/vanilla yogurt, egg yolk with vanilla flavoring BUT reduce the wet ingredient (water or milk) - eyeball it.  The boxed kind of pudding is cornstarch or powdered sugar/10x, milk, vanilla flavoring - you could try making your own conconction.  The egg yolk is the emulsifier.  My sister-in-law uses no box things if she can't help it (allergies & such) - she made her own 3/4 c. powdered sugar, 2 tsp vanilla, 1/2 tsp nutmeg and 1 egg yolk........................or cheat and search the internet for answers (ask.com/food channels).................... HOMEMADE VANILLA PUDDING:  Ingredients:1 egg yolk, 2 1/2-3 tablespoons cornstarch, 2 tablespoons white sugar (or to taste) ,1 cup milk (whole works best), 1 tsp vanilla extract (or more to taste), 1/2 cup whipping cream, well chilled     Directions:  In a small pot whisk together egg yolk, 3 tbs of the milk, sugar and cornstarch until smooth. Once ingredients look mixed add rest of the milk, stir until smooth.   Put egg milk over medium heat and, stirring constantly, bring to a boil once then remove from heat and let cool. Stir frequently while the pudding is cooling to avoid a skin forming.

Sorry I wasn't clear, the cake is Dirt Cake...and you need it dry....(pudding mix)

Since you have to make the pudding to make the dirt cake I would just make a cooked pudding.
The recipe that Jeannine posted would be good to make it chocolate add some chocolate chips or cocoa tot he mixture.  Allow the pudding to cool with a piece of plastic wrap on the top to prevent a skin from forming.  Once it is cool continue on with the recipe.
Here is a chocolate pudding recipe that is very easy.
Basic Pudding
2 Tb cornstarch
3/4 Cup sugar
2 Cups milk
1 egg, lightly beaten
1 tsp vanilla
1 Tb butter
1 ounce chopped, unsweetened chocolate
(if you have to use cocoa use 3 Tb cocoa and an extra 1 Tb butter)
Mix cornstarch and sugar in a heavy saucepan.  Gradually add milk and heat, stirring constantly over medium heat, until mixture boils.  Boil and stir for 1 minutes. 
Turn heat to low, mix a little of the hot sauce into the egg, return to pan, add chocolate and cook and stir 2-3 minutes.  Do not boil.
Off heat add vanilla and butter.
Serve warm or cold.
If you do not want a skin forming place a piece of plastic wrap directly on the surface of the pudding.

I HAVE BEEN LOOKING ALL OVER FOR A REALLY GOOD HOMEMADE PUDDING RECIPE AND NEVER COULD FIND ONE I AM SO GLAD THAT A COUPLE OF YOU HAVE POSTED SOME RECIPES ON HERE FOR HOMEMADE PUDDING.

your recipe is close to mine
i only use 1/2 cup of sugar because i don't like it too sweet
also  it's vanilla pudding if you don't add the chocolate       that i use in my banana pudding

also adding coconut , etc to the basic recipe

cook it a tad longer for cream pies of any flavor

Is exactly for one package of dry pudding? For Dirt Cake you use dry pudding mix.

just to clear the picture here because  no one seems to know what dirt cake is

dirt cake is a mixture of crushed oreo cookies   and  DRY pudding mix that has been combined with    whipped topping        instead of milk

retaj, i don't know the answer but i bet if you typed      "instant pudding mix substitute"            in your search engine you would come up with more than one site with that info

By the way to people not familiar with Dirt Cake, It kinda looks like this:

The red in the middle is a flower....Dirt Cake is one of the most AWESOME cakes! Believe me, if you LOVE oreos, you'll adore this!.



Thank you Nellie,I found a recipe for 2 oz.. 1/3 cup sugar+1/6 cup sugar and add lots(I don't know the amount) of vanilla flavoring like vanilla powder

I guess I never thought about it.  I thought that the dirt cake was the pudding, made, and folded into the whipped topping or whipped cream then layered with the crushed cookies.
Well now I guess I will have to make one.  It might be a project that my Grandson would love to try.

yes it is    one of those things you can't stop eating when you have it

some people make it in a flower pot  and add a few gummy worms around the top

since the mixture ends up wet i would just add vanilla extract      probably a teaspoon       the only time you would need the powdered vanilla, is if you want to store the mix for later use

Here is a good recipe : I always make it from this!

Dirt cake

 

 

Ingredients :

·       1 (16 oz.) pkg. (3 ½ sticks)  Oreo cookies

·       1(8 oz.) pkg. cream cheese

·       1 (12 oz.) pkg. whipped topping

·       1 c. confectioners' sugar

·       1 stick butter

·       2 (3.5 oz.) pkg. instant vanilla pudding mix

·       2 c. milk

·       1 tsp vanilla extract/powder

1.   Crush Oreos very fine.

2. Mix cream cheese, butter, and sugar in a bowl

3. Mix milk, pudding, and whipped topping vanilla extract/powder in a large bowl

4. Combine pudding and cream cheese mixture together

5. Layer in a large pot/bowl starting with cookies then cream mixture.

6. Repeat layers until you run out of cookies and cream mixture

7. Chill in refrigerator until ready to serve
