Hi Shasta - welcome to VBB.
The fudge will harden outside the 'fridge ..... it's just faster inside.  I'm not certain about keeping it outside.  Call the 800 number advertised on this site - a live (!!) person will give you professional advice.

I keep my in the fridge,just because it seem to lkast a little longer if
it is not out in plain sight on the table.

Fudge can be stored out of the refrigerator.  I think the freshness will be better if refrigerated.  The other thing I do if I have made a large batch I will cut it in half and wrap one half.  I will cut the other half into portion sizes.  I find that by cutting you expose more surface area to air possibly drying out the fudge. If you are making it far in advance it can be frozen.  To thaw leave it wrapped and thaw in the refrigerator overnight.

I put my fudge in the refrigerator simply because I do not have the room to leave it out.  I live in an apartment and the kitchen is SMALL!
