For cookies I always use parchment paper.  For cakes and things like banana bread, etc. I use a piece of waxed paper and margarine to coat the pan.  Throw out the small piece of waxed paper.  Learned that from my Mother and always do it that way.

when I go to bake or fry I make sure that the pan is coating befor cooking.

I was using plain butter - but I did use the hand in the baggie part.  I have never really like baking sprays either.  But my Dad loves them.
