This question reminded me of one I have been meaning to ask of everyone! Do I assume correctly that I can substitute unbleached all-purpose flour for regular all-purpose flour? Target had King Arthur's unbleached flour for half price and I couldn't resist buying a 5 lb. bag!

Yes the measurements would be the same for bleached or unbleached.
As a matter of fact I read somewhere that a lot of bakers prefer unbleached for bread so there is not the possibility that the chemicals used for bleaching will effect the yeast.
